My mom called this dish hash, so I always thought the word "hash" meant good food, made well, that no one can resist.

- 1 pound ground beef
- 2 pounds potatoes peeled and diced
- 1 large onion diced
- 2 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1/2 cup beef broth
- 1 teaspoon paprika
- 1/2 cup shredded cheddar cheese optional
Heat the vegetable oil in a large skillet over medium-high heat.
Add the diced potatoes and cook for about 10 minutes, or until they start to soften.
Add the ground beef, breaking it apart with a spatula. Cook until the beef is browned.
Stir in the diced onion and minced garlic, cooking until the onion is translucent.
Season with salt, pepper, and paprika. Pour in the beef broth and bring to a simmer.
Reduce heat to low, cover, and cook for another 10 minutes, or until the potatoes are tender.
If using, sprinkle shredded cheddar cheese over the top and cover for 2-3 minutes to let the cheese melt.
Serve hot, garnished with fresh parsley if desired.
