Salad
- 1 large head Romaine lettuce chopped
- 1 pint small cherry tomatoes halved
- 1 cucumber peeled then cut in half and sliced
- 1/2 of one red onion diced
- 1 cup olives
- 1 cup Pepperoncini peppers sliced
- 1/2 cup pepperoni cut into halves
- 1/2 cup hard salami chopped
- 3 slices Asiago cheese chopped
- Pecorino Romano diced
Italian Dressing
- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- juice from 1/2 lemon
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 1/2 teaspoon crushed red pepper flakes
- Salt and pepper to taste
Toss all salad ingredients in a large bowl.
In a liquid measuring cup or small bowl, whisk together the dressing ingredients.
Drizzle prepared dressing over the salad.
Serve immediately.
