Pizza and salad is one of my family’s favorite meals. It’s my go-to dinner for a Friday movie night at home or simply anytime I don’t have a lot of time to prepare dinner. Of course, sometimes an overwhelming pizza craving just hits me! Being a busy mom, I don’t always have time or the patience to pick up dinner in rush hour or wait 45 minutes for delivery. Grabbing a quality, great-tasting American Flatbread Pizza right from my freezer is a much better option. And, it is conveniently available for me to buy at my local Publix.
I always have a variety of salad ingredients in my refrigerator. We probably eat a salad 5 days a week at my house. This simple Italian chopped salad is one of my family’s favs and so full of flavor. It pairs perfectly with any of the American Flatbread Pizza varieties. I’m excited to share this awesome combo with you. Be sure to grab my Italian chopped salad recipe at the bottom of this post.

The American Flatbread Pizza

I absolutely love pizza with a crispy crust. Seriously though, does anyone actually like a soggy crust? American Flatbread totally delivers on the crunch factor, along with all the great flavors you want in a pizza. It’s a perfect blend of flavors and textures.

What I feed my family is important and American Flatbread Pizza is made from only high-quality ingredients. In fact, the crust is made from only organically-grown wheat. The sauce is made of organic ingredients like carrots, celery, onions, red wine, and olive oil. I love getting the convenience of frozen pizza without the compromise.
On my latest trip to Publix I picked up 3 American Flatbread Pizzas. I got one of each below:

Uncured Pepperoni & Uncured Bacon Topped with uncured bacon and uncured pepperoni because no one needs nitrates in their pizza! There isn’t just mozzarella cheese, there’s also delicious white cheddar cheese.

Tomato Sauce & Three Cheese Topped with mozzarella, of course. But it’s also topped with Vermont’s Blythedale Farm Padano cheese, Parmesan, garlic oil, and fresh herbs.

Revolution Topped with fresh mushrooms and onions, Asiago cheese, and fresh herbs. The Revolution variety is my favorite and the one I served the other night with my Italian Chopped Salad. Love me some mushrooms!

The Italian Chopped Salad Recipe

Pizza is always best shared with friends and family. Pair it with my Italian Chopped Salad and you’ve got dinner enough to feed a small army. Maybe not quite an army. My salad recipe provides 4-6 servings, but you can easily double or triple the recipe and add some additional ingredients. Some chopped ham from the deli would be a nice addition. To be honest, I had some that I chopped up for this salad, and then forgot to put it in. I seem to do that a lot! Luckily, it always seems to work out.

I used green olives this time, but black olives are great in this salad too. Diced green pepper is a nice addition too, and sometimes I’ll use sliced green onion instead of the red onion. It just depends on what I have on hand.

Let’s talk about the cheeses in this recipe for a minute. The recipe calls for slices of Asiago and diced Pecorino Romano Cheese, both of which I absolutely love. If Asiago cheese doesn’t appeal to you, I recommend Provolone cheese as a swap. I usually have the Pecorino Romano on hand to grate over pasta, but you could easily trade this out for some grated or shaved Parmesan cheese. Basically, just use whatever cheese your family enjoys.

But, if you don’t want to make your own just use your favorite bottled Italian dressing or simply vinegar and oil.

Ingredients
  

Salad

  • 1 large head Romaine lettuce chopped
  • 1 pint small cherry tomatoes halved
  • 1 cucumber peeled then cut in half and sliced
  • 1/2 of one red onion diced
  • 1 cup olives
  • 1 cup Pepperoncini peppers sliced
  • 1/2 cup pepperoni cut into halves
  • 1/2 cup hard salami chopped
  • 3 slices Asiago cheese chopped
  • Pecorino Romano diced

Italian Dressing

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • juice from 1/2 lemon
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper to taste

Instructions
 

  • Toss all salad ingredients in a large bowl.
  • In a liquid measuring cup or small bowl, whisk together the dressing ingredients.
  • Drizzle prepared dressing over the salad.
  • Serve immediately.
