Ingredients
  

  • 4 sweet potatoes
  • 2 teaspoons oil
  • 1 green pepper sliced
  • 1 yellow pepper sliced
  • 1 red pepper sliced
  • 1 onion sliced
  • 1 cup shredded cheese
  • Sour cream and green onions for garnish

Seasoning:

  • 1 tablespoon cornstarch
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/8 teaspoon crushed red pepper

Instructions
 

  • Heat oven to 375 degrees. Clean and pat dry sweet potatoes. Wrap in foil. Bake in preheated oven for 30­ or 40 minutes or until soft.
  • In a small bowl, combine seasoning mix ingredients.
  • Heat oil over medium heat in a large pan. Add peppers and onion. Saute for 4­5 minutes. Stir in seasoning and cook for an additional 5 minutes or until vegetables are softened.
  • Slice open potatoes and stuff with vegetables. Top with shredded cheese, sour cream and green onions.
