Ingredients
  

  • 2 cups sifted cake flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup skim milk
  • 2 tablespoons vegetable oil
  • 2 eggs lightly beaten
  • 1 cup chopped fresh strawberries
  • 1 tablespoon cake flour
  • Vegetable cooking spray

Instructions
 

  • Combine first 5 ingredients (the dry ones) in a medium bowl. Make a well in the center of the mixture for your wet ingredients.

  • Combine milk, oil, and eggs in another bowl.

  • Add the wet mixture to the center of the dry ingredients, stirring just until moistened.

  • Dredge strawberries in 1 tablespoon flour; gently fold into batter.

  • Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan coated with cooking spray.
