chopped fresh strawberries

cake flour
Vegetable cooking spray
Instructions
Combine first 5 ingredients (the dry ones) in a medium bowl. Make a well in the center of the mixture for your wet ingredients.
Combine milk, oil, and eggs in another bowl.
Add the wet mixture to the center of the dry ingredients, stirring just until moistened.
Dredge strawberries in 1 tablespoon flour; gently fold into batter.
Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan coated with cooking spray.
Bake at 350 degrees for 53 to 58 minutes. Cool in pan 5 minutes; remove from pan, and let cool completely on a wire rack.
