Strawberry bread is something that I have enjoyed making for years. It can be tricky to make bread using fresh fruit because the juices can make your bread too moist. I find that chopping the strawberries into small pieces works well for this recipe.
One reason I really like this bread recipe is that each slice only has 117 Calories and 2.5 grams of fat! You can indulge in a sweet treat without feeling the guilt with this recipe.

Low Cal Strawberry Bread
Ingredients:
- 2 cups sifted cake flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/4 cup skim milk
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten
- 1 cup chopped fresh strawberries
- 1 tablespoon cake flour
- Vegetable cooking spray
Directions:
1. Combine first 5 ingredients (the dry ones) in a medium bowl. Make a well in the center of the mixture for your wet ingredients.
2. Combine milk, oil, and eggs in another bowl.
3. Add the wet mixture to the center of the dry ingredients, stirring just until moistened.
4. Dredge strawberries in 1 tablespoon flour; gently fold into batter.
5. Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan coated with cooking spray.
6. Bake at 350 degrees for 53 to 58 minutes. Cool in pan 5 minutes; remove from pan, and let cool completely on a wire rack.

This looks great! I never thought of making strawberry bread. I love the strawberry-banana combination, as in smoothies…I’m think of tweaking this a little so I get Strawberry-Banana Bread. Oh, I can’t wait! And it’ll still be somewhat lo-cal. Thanks for this one!!!!!!
