Ingredients
  

  • 1 1/4 cups uncooked quick or old-fashioned oats
  • 3/4 cup all-purpose flour
  • 3/4 cup firmly packed light brown sugar
  • 3/4 cup dried cranberries or raisins
  • 6 tablespoons unsalted butter softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated lemon peel (optional)

Instructions
 

  • Preheat oven to 350°.
  • Combine all ingredients in large bowl and stir with wooden spoon until well mixed; set aside. Drop by rounded tablespoons on ungreased baking sheets, 2 inches apart.
  • Bake 12 minutes or until edges are light golden. Let stand 1 minute on wire rack; remove from sheets and cool completely.
