Like many of you, the holiday season is the busiest time of the year for me. It even seems like the busy season started unseasonably early this year, as I’ve been running in circles since early October. I wouldn’t trade this time of the year for anything tough. Even with all the hustle and bustle it’s still magical. One of my biggest challenges during the holiday season, is getting a delicious and healthy meal onto the table for my family – especially on week nights. My best go-to meal is a slow cooker pot roast served up with a side of creamy mashed potatoes.
Side Dishes Make the Meal
I always get excited when a meal takes no time to prepare, yet looks like I have been slaving in the kitchen for hours. This meal couldn’t be any easier to prepare thanks to the slow cooker and the Betty Crocker Ultimate potatoes which taste like homemade. Just after the roast finishes up in the slow cooker, I add some water, butter and milk into a pot for the mashed potatoes. They are ready in minutes. Easy peasy! These aren’t your typical instant potatoes either – they’re made with real potatoes and real cheese. Can you see that cheesy potato goodness?
Slow Cooker Pot Roast
3 – 4 pound beef roast, of choice (I usually go with whatever is on sale.)
1 can cola
1 cup beef broth
1 envelope brown gravy
1 envelope onion soup mix
salt and pepper
1 bag pre-washed baby carrots
1. Place carrots into the bottom of the slow cooker. Generously salt and pepper roast, and place on top of the carrots.
2. In a bowl, combine the cola, beef broth, gravy mix, and onion soup mix. Whisk until well combined and pour over roast.
3. Cover and cook on low for 8 – 10 hours, depending on your slow cooker. Mine takes closer to 10 hours. When done, the roast should easily pull apart with a fork.
Some things are just perfectly paired together, and that’s how I feel about this roast and a side of the Betty Crocker Ultimate Loaded Mashed Potatoes. My family goes nuts for anything cheesy and anything with gravy, so this meal certainly fits the bill. The combo of beef broth, cola, onion soup and gravy mixes gives the pot roast such a yummy rich flavor. This is by far my favorite pot roast recipe.
