I have a weakness for dessert. I always have. Sugar and I have been long time friends.

This Banana Dragon Fruit Ice Cream is great. I love desserts but the sugar is not the best thing to have in a healthy diet. Nice cream is a great way to have a dessert and still eat healthy.

While I love sugar, I don’t want to eat too much of it all the time and I try to save the really decadent desserts for special occasions. Just because I know that is what I need to do, that doesn’t mean my sweet tooth understands that. I try to have healthy desserts most of the time, and that includes things like fresh fruit. There are times that I really need to have something that just feels like a real dessert. I love having recipes that remind me of eating real desserts but are actually healthy snacks in disguise. That is exactly what Banana Dragon Fruit Nice Cream is.

You won’t believe what the secrets are…

Ingredients:

Servings: 3-6 (depending on their size and how much you would like to make)

  • very ripe whole  bananas
  • 1 dragon fruit (Half is for the nice cream, the other half is for topping and is optional)
  • ½ cup almond or coconut milk
  • optional, 1-2 teaspoons of chia seeds

Instructions:

Step 1: Peel the bananas and place in a bag or container and freeze fully. This usually takes about an hour.
Step 2: When the bananas are frozen solid, break them up a bit and then toss into the blender.
Step 3: Pour the almond/coconut milk over them and add in the dragon fruit. If you are using chia seeds, add them now.
Step 4: Blend on high until thick and creamy.  It will start to melt quickly so you’ll want to work at a brisk pace.
Step 5: Scoop it out of the blender and enjoy.

Note: You do not want to puree or break down the bananas before freezing as you will not end up with the same ice cream like consistency.  The finished nice cream will refreeze, but only well, if you put it immediately into a really cold freezer and still enjoy within a day or so.  It is best if you are able to make and eat at the same time.

    I’ve never had dragon fruit and don’t know if my grocery store even carries it but it looks interesting. I would be willing to try it.
