Blueberry Smoothie Recipe

Do you ever have whole days when you crave blueberry this and that? Then let me tell you, instead of your usual blueberry muffin or blueberries on your cereal, why don’t you try this blueberry festival in a glass? This will quash all berry cravings quite deliciously and packs a ton of nutrition and immune-boosting antioxidants to boot.

The fresh, bright, tart, sweet blast of blueberry against the creamy banana tastes so right when blended with Greek yogurt and sweet, hydrating apple juice, which brings a zing of sweet, tart apple to the party.

For breakfast, it gets everyone off to a nutritious start. After a workout, it’s the perfect cool-down, replenishing potassium and other important electrolytes. And for a pool party, they are absolutely perfect with an umbrella in them, or not, because they bring cool comfort and rehydrate the body after being out in the hot sun.

Why you and your family will love blueberry smoothies

The other day, while I was babysitting the twins Chloe and Zoe, I asked these young ladies what they wanted to drink with their eggs and French toast. I mean, I was already bringing it for these little divas, giving them a real five-star spread with yummy scrambled eggs and all, served not with just any French toast but with this Baked Apple Cinnamon French Toast.

“How about a yummy berry smoothie that’s like pink, meets blue, meets purple in a glass with some whipped cream on top?” I offered.

“YAY!”

And with just one banana, some berries, some Greek yogurt, and apple juice, I had two smoothies to serve these little ladies, who were so excited by the color of them alone, I was soon their Nana Rhonna again, bringing equally beautiful smiles to their equally beautiful faces.

Kids love these colorful smoothies, and moms can feel good about serving them something so wholesome and nutritious to drink that can fill the tum-tum and power them through the day.

How do I store leftovers?

Once made, these smoothies will keep for up to 24 hours in a covered pitcher or an airtight container in the fridge. They’re also great to have on hand whenever you need a quick, nutritious drink to take to work. Just divide the smoothies into individual bags or freezer-safe containers and freeze for up to 3 months. When you’re ready to enjoy one, just thaw in the fridge overnight or at room temperature if you’re in a hurry.

Ingredients
  

  • 1 cup apple juice or substitute with almond milk
  • 1 medium banana
  • 1 1/2 cups frozen blueberries
  • 3/4 cup vanilla Greek yogurt

Instructions
 

  • Place the apple juice (or almond milk), banana, frozen blueberries, and Greek yogurt into a blender.
