I love it when a dish is equal parts super healthy and super delicious…

This broccoli slaw brings the flavor in so many endless ways. Tart cranberries complement the green, herbaceous broccoli and the nutritious carrots. All the ingredients are set off by the surprise of crunchy almonds and the sweetest, tangiest, creamiest homemade coleslaw dressing.
And when it comes to dressings, you’ve never tasted slaw until you try it with a homemade dressing comprised of mayonnaise, apple cider vinegar, sugar, lemon juice and salt and pepper. Then, it’s your dressing. And it makes all the difference between a good dressing and a delicious one.
Why You And Your Family Will Love This Healthy Broccoli Coleslaw
Another great thing about this broccoli coleslaw? It’s a great way to include cruciferous vegetables into your diet. If I can find a way to prepare them that kids will gobble down, even if that means drenching those florets in a delicious cheese or coleslaw sauce, so be it. At the end of the day, what matters is that we ate our broccoli, right? Not if we sprinkled a bit of dressing on it!
Because everything I’ve learned in my studies of nutrition has taught me one thing—getting enough nutrients is essential for everyone, whether young, old, or in between.
Even More Reasons You and Your Family Will Love Broccoli Slaw
A good slaw can make even the most resistant eater completely change their colors and become a vegetable enthusiast. I mean, how many people would have never even tried cabbage if it weren’t for coleslaw? Raise your hands, and be honest now! Because cabbage, all alone, isn’t much of an appetite-stimulating food. And raw broccoli, too, can leave something to be desired. And that something that raw broccoli needs is some coleslaw-flavored dressing to make it all tender, delicious, and enticing.
You know a slaw recipe knows what it’s up to when it includes delicious ingredients like lemon juice and apple cider vinegar—those two acids together help tenderize those broccoli florets and make the flavors of red onion ignite. The mayo and sugar do the rest of the magic—not to mention those cranberries, which cast a spell on this salad, contrasting perfectly with that sweet, acidic sauce with their tart magic.

How to Make Ahead and Store
If you have leftovers, the good news is that the raw broccoli, carrot sticks, and onions are all hardy vegetables that grow more delicious and tender the next day after being marinated in the dressing. Broccoli slaw will stay fresh for about 3 days after service, though. You cannot freeze this mayonnaise-based slaw.
