Last week I made some marshmallow creme and it was so wonderfully delicious that I have since been dreaming up different ways that I can use it. Dolloped atop a bowl of ice cream with chocolate syrup it is simply perfection, yet I found myself still wanting to do more with it. I realize red velvet whoopie pies are already plastered all over the internet and Pinterest, with Valentine’s Day just weeks away… but I still had to do it. I wanted my own whoopie pies! So, here we are…
This picture just isn’t showing off the beautiful red color, as I would like. I tried out a new photography light box today… well, kinda sorta. One of the lights that came with it was broken, so back to Amazon it goes. The flash light I had my mother hold up to one side of the box didn’t do much for the picture. Plus, I think the settings are all off on my camera again. A professional photographer I am not, but it’s slowly getting better. Anyways, I think you still get the gist of what I made today. I seem to be off on a bit of a tangent… so I’ll jump right into the recipe now.
I doctored up a box cake mix a bit for this treat, but it’s the homemade marshmallow cream that really makes it special. Please don’t judge me for the cake mix. π
Red Velvet Whoopie Pies
- 1 box devil’s food cake mix
- 1 (4 oz) box instant chocolate pudding
- 1/2 cup water
- 1/2 cup vegetable oil
- 3 eggs
- red gel food coloring

- Preheat oven to 350 degrees. Line baking sheets with parchment paper or lightly grease.
- In a large mixing bowl, beat first five ingredients on low speed just until moistened. Gradually add and mix in red food coloring, until you’ve achieved a deep red color.
- Using a 1/4 cup measure, drop batter onto cookie sheets, approximately 2 inches apart.
- Bake 13 to 15 minutes or until set. Allow to cool on cookie sheets for a few minutes, then transfer to cooling racks. Cool completely.
- Dollop about 2 tablespoons of marshmallow creme onto the flat side of one cookie, being careful not to overfill. Place another cookie on top of creme, bottom side down.
