Brownie Bites

When I need a go-to treat for kids, brownie bites are fast, fun, and deeply satisfying. They’re so versatile, you can even make a wide array of desserts with them. You can dip them, ice them, arrange them in a big croquembouche-like tower (those big towers of choux pastry balls slathered in syrup) and serve them next to a chocolate fountain for a party. You could also make a brownie bites treat bar with all kinds of dips and toppings like nuts, ice cream, whipped cream, raspberry jelly, buttercream frosting, sprinkles, and various candy toppings and kids will go absolutely wild.

And with just 15 minutes to make and 15 minutes to bake, who doesn’t have time? You can swirl these together while just about anything is on the stove for dinner and have dessert done before the main meal is even ready. A few of these with ice cream, chocolate sauce, some whipped cream and a cherry on top, and you have a hot fudge sundae everybody will love.

Or, just savor the rich, chocolatey crumb of the brownies all by themselves and lose yourself in their soft, dreamy texture.

Brownie bites are a fast, fun, and easy way to prepare your favorite treat, homemade, and quite quickly. Brownie bites, being smaller, bake more quickly, meaning you can have a kid-sized treat or a dessert base (for some of the delicious treats I suggested above) done very quickly.

And making the batter from scratch like this allows you to get as indulgent with the ingredients as you want. Using real, whole, unsalted butter and higher-quality semi-sweet chips, like Ghirardelli’s makes all the difference in the world to the chocolate flavor.

How to Make Ahead and Store

You can keep these bites in an airtight container or in tightly wrapped foil or cling wrap at room temp for up to 3 days. You can also freeze them for up to 3 months. I flash freeze them on a tray first for an hour and then I put them in freezer bags, push out all the air (important!), and then freeze up to 90 days. Mark your date on the bag so you’ll be sure to eat them at their peak of freshness.

Ingredients
  

  • 3/4 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F. Grease a 24-cup mini muffin pan with non-stick spray.
  • In a medium saucepan, melt butter over medium heat. Stir in the sugar, followed by the cocoa powder and vanilla extract. Remove from heat and allow the mixture to cool.

  • Whisk in the eggs and salt and then gently stir in the flour and chocolate chips until just combined.

  • Scoop the batter into the prepared mini muffin pan, filling each cup about three-quarters full.
  • Bake for 12-15 minutes in the preheated oven
