T and I made these Buffalo Ranch Chicken Nachos for our last movie night and she went crazy for them. It was a great night. I love nothing more than snuggling up on the couch with the people I love. It was T’s turn to choose the movie, so we watched one of her favorites again. I say “again” but if I’m being truthful, I didn’t mind watching it again.
I try to do a family movie night once a week, but sometimes when it’s just T and me, we like to snuggle up in bed and listen to audiobooks together. There are some terrific middle grade books that we have both enjoyed. I sometimes like to listen to a book even after I’ve read it. It brings the story to life in a new way.
The highlight of our last movie night was definitely the nachos though.
Buffalo Chicken Nachos
I used some shortcuts making these nachos. I purchased a rotisserie chicken from the supermarket and simply pulled apart the white meat and tossed it with a cup of buffalo sauce. The next day, I used the leftover dark meat to make a simple chicken fried rice. Baked chicken works great in this recipe too. You just need about 2 cups shredded or diced chicken.
Since these nachos call for only a few ingredients, you want them to be good. Choose a bottled buffalo sauce that you really enjoy and the very best ranch dressing. Buffalo Ranch Chicken Nachos
Ingredients
- 13 oz bag tortilla chips
- 2 cups grated Cheddar cheese
- 2 cups shredded rotisserie chicken
- 1 cup buffalo sauce
- 2 green onions sliced
- 1/4 to 1/2 cup Litehouse 20 oz. Homestyle Ranch dressing
Instructions
- Preheat oven to 350 degrees.
- Spread tortilla chips evenly across bottom of a sheet pan.
- Sprinkle with cheese.
- Toss chicken with buffalo sauce and sprinkle over tortilla chips.
- Sprinkle with green onion.
- Bake for 11-13 minutes, until cheese is bubbly and melted.
- Drizzle with Litehouse Homestyle Rance dressing.
