Cake Mix Brownies

You know, cake mix is just a series of ratios of delicious things that go in cakes, some cookies, and definitely brownies—if it’s chocolate cake mix. And one way to put together a fast and easy pan of brownies is to make Cake Mix Brownies. Then they’re done in minutes flat—specifically 30 minutes flat, in fact, but with only ten wee little minutes of prep—if that.

I say this because, if it were me, the prep time would be cut to mere seconds—that’s how much I love a quick pan of brownies with, say, just about everything from milk to a cold Coke to vanilla ice cream. In fact, that prep time might say one minute of prep… because the time it takes me to get out a bowl, tear open a bag of cake mix with my teeth (that’s for serious brownie cravings, folks), and to toss that in a bowl with some chocolate chips, eggs, and oil is about 2.5 minutes. I timed myself. So, if you move fast like Speedy Gonzales as I do—that means, a brownie maker on a serious mission to eat some brownies, then you’ll be done in, like, 22.5 minutes. And be the fastest mouse in all Meh-hi-co, as that mouse puts it.

Cake mix also does something else to brownies that is heavenly; it gives them a moisture that only cake mixes can impart. The mixes are finely powdered, so they take up the oil (or melted butter) and eggs all the more easily and distribute this moisture very evenly through the mixture. This means dewy, moist, chewy, delicious, decadent chocolate deliciousness with every single bite.

Cake Mix Brownies are a convenience food that doesn’t taste like a convenience food. It’s convenient to whip these up, yes, but as far as flavor goes, these moist, delicious brownies are the closest thing you can come to homemade brownie flavor in a quick-fix brownie. Because, as I said, cake mix helps all the moisture evenly distribute throughout the entire pan of brownies, making them ultra-luscious throughout.

So, for those evenings when you want to pause the movie and whip up something sweet, hot, chocolatey, comforting, and delicious, these brownies are fast enough that you can get back to that movie quickly; they will quickly become your new favorite sweet fast-fix, guaranteed-to-please favorite brownie mix.

How to Make Ahead and Store?

You can keep these brownies at room temperature for several days or really preserve them in the refrigerator for up to a week. You can also freeze these brownies baked up to three months. Freeze them in an airtight freezer container or freezer-safe bags. I’d wrap them in plastic wrap first to preserve their moist quality.

I love these Cake Mix Brownies for lazy days of decadence. And my lazy days of decadence are lazy and decadent. This means I get to lounge around and fix all my favorite comfort foods, watch movies, rest from a week’s full of cooking and kids, and watch them, getting up only to cook my next feastly feast. Feast one is usually Homemade Tomato Basil Soup with these Ultimate Grilled Cheese Sandwiches. Feast two is usually something Asian, like this Asian Lettuce Chicken Wraps and Crispy Air Fryer Onion Rings. From there on out it’s brownie time, which I like to feast on with these Homemade Vanilla Milkshakes. And believe it or not, I use the sprinkles, even though I’ve been cooking with them for kids all week. It adds a touch of comfort and festivity to my marathon of House of the Dragon.

Ingredients
  

  • 1 box chocolate cake mix (15.25 ounces)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F. Grease an 8×8-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, combine the chocolate cake mix, vegetable oil, and eggs. Stir until the mixture is smooth.

  • If using, fold in the chocolate chips to the batter.

  • Pour the batter into the prepared baking pan, spreading it out evenly.
