Throughout most of the U.S. it’s been a brutally cold week.

For many of my friends who live further north, snow days have been a regular occurrence this winter. Don’t fret, because I have the perfect snow day recipe for you. Your kids are sure to love this Cheeseburger Soup recipe!
Don’t you just love a good bowl of homemade soup on a cold day?
I first made this soup while visiting my son in Tennessee last month. Even big kids like him love this soup. My son and his friends emptied the pot in a matter of minutes. After a few minor alterations, I think my most recent batch of this soup is just right. Here’s the recipe:

Ingredients:
- 1 pound lean ground beef
- 1 cup chopped onion
- 1 cup shredded carrots
- 1 cup chopped celery
- 2 teaspoons Italian Seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 tablespoons butter
- 5 cups chicken broth
- 4 cups cubed potatoes
- 1/4 cup all-purpose flour
- 3 cups shredded Cheddar cheese
- 2 cups milk
- 1/2 cup sour cream
Instructions:
Step 1: In a large pot, melt 1 tablespoon butter or margarine over medium heat. Cook and stir vegetables and ground beef, until beef is brown and vegetables are tender.
Step 2: Stir in Italian seasoning, salt and pepper. Add the broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 12 minutes.
Step 3: Melt the remaining butter and stir in flour. Add the milk, stirring until smooth.
Step 4: Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil. If desired, serve with a bit of shredded Cheddar sprinkled on top.

That’s the perfect cold-weather recipe! We have a really cold day coming next week (nothing compared to what’s happening in other parts of the country) and I’m adding this to the menu!!
I love cheeseburger soup! My recipe is a little different – I don’t do the carrots or potatoes, and put pasta on the side (usually elbow macaroni) so it doesn’t get mushy in the soup. It’s definitely a favorite in our house and such a great thing to eat on a chilly winter day!
