Picture a baked potato topped with seasoned roasted chicken, cheddar cheese melted and bubbling, all topped with silky sour cream and you have the flavor profile of this delicious Chicken and Potato Casserole. The name just cannot do it justice.

The other day, one of my client’s daughters lost her retainer while dining at a Chinese buffet restaurant. I mean, this was a $3,000 item. They had to dumpster dive. They did find it, God bless them, but only after hours of very dirty and anxiety-ridden digging. Those kinds of experiences are very draining.

And there will always be nights like these when you have children or teens, and for those nights, you need a dish like this that’s so full of comfort and so easy to prepare, it’s a treat for you and the entire family to share in triumph and relief with less effort than it would take than to get everyone to agree on a DoorDash meal.

Why You Will Love This Chicken and Potato Casserole Like Crazy

This casserole is so easy to prepare, you can actually throw every single thing right into the casserole dish you’re making it in and bake it. Period. All you do is layer cut-up chicken and potatoes into a baking dish filled with milk, butter, and savory spices like garlic powder, onion powder, and paprika, plus salt and pepper to activate all the flavors the milk will touch, and then layer on your cheese and bake.

Plus, this casserole is so versatile. You can basically treat it like a stuffed baked potato casserole and add in any and everything you can stuff in a baked potato from broccoli to bacon to chopped onions or tomatoes.

How to Make Ahead and Store?

You can refrigerate this dish, covered firmly with plastic wrap for up to 3 days, but with the sour cream, melted butter, and milk base this dish would be a disaster if frozen.

Serving Suggestions

Ingredients
  

  • 1.5 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 4 medium russet potatoes peeled and cut into 1-inch cubes
  • 1/4 cup unsalted butter melted
  • 1 cup whole milk
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley for garnish

Instructions
 

  • Preheat oven to 375 degrees F.
  • Grease a 9×13 inch baking dish with cooking spray.
  • In a large bowl, combine melted butter, milk, sour cream, garlic powder, onion powder, paprika, salt, and pepper.

  • Add the chicken pieces and potato cubes to the bowl and mix until they are well coated with the sauce.

  • Transfer the chicken and potato mixture to the prepared baking dish, spreading it out evenly.

  • Sprinkle shredded cheddar cheese over the top of the chicken and potatoes.

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the potatoes are tender.
  • Garnish with chopped fresh parsley before serving.
