Finding a babysitter, and even more importantly, finding the time and money for a night out on Valentine’s Day is a struggle. This year why not try something different? Plan to wake up with your special someone a little early and enjoy breakfast together! You’ll still be able to relax, catch up, and enjoy each other’s company without the pressure and expense of a night out. You can make this date-worthy granola the night before and use it to top yogurt, as cereal, or even on ice cream (shhh we won’t tell that you had ice cream for breakfast!)
Ingredients
• 1 cup quick cook oats
• 4 medjool dates pitted and chopped
• ¼ cups raw honey (or other binding liquid like maple syrup)
• ½ cup hazelnuts, chopped
• Pinch of salt
• ½ tsp vanilla extract
Directions
Preheat your oven to 450F. Line a cookie sheet with parchment paper.
In a large bowl mix together all of the ingredients. You may need to add a little more honey (or other binding liquid) if you have a lot of loose oatmeal. The ingredients should not come together in a single clump but they should stick together in smaller bunches.
Spread out the granola onto the cookie sheet, as flat as possible. Place in the oven.
After 5-8 minutes use a fork or spoon to mix up the granola. Do this again 5 minutes later.
When the oats and nuts turn a golden brown color, remove from the oven and mix again. Wait several minutes. It should turn crunchy as it cools down. If it does not, place back into the oven for a few more minutes.
Note: Do not wait for the color to be dark brown, at this point it’s cooked too far and may taste burnt.

Wow, that is so easy to make! I will have to try this and add some of my favorite dried fruits to it!
We spend a ton on granola for my daughter has it every morning it seems with greek yogurt for breakfast, and then also to snack on. I like the idea of putting what we love in it and also the cost. Love this!
We love homemade granola. I completely forgot I have a ton of dates and they would be perfect to add. I wish we could have hazelnuts but nut allergies. They use to be so delicious.
