Orecchiette pasta with sauteed tomatoes, spinach and white beans is a simple yet flavorful dish inspired by my travels across Italy last summer. Last summer I was fortunate to spend a week and a half in Italy. It was my first time in Italy and part of a tour that also included some time in Switzerland, Monaco and France. It was such a wonderful experience, and I have to admit that I enjoyed my time in Italy the most. My tour group visited quite a few towns and cities in Italy during those 10 days, including small cities such as Orvieto and popular tourist destinations like Rome and Venice. It’s the city of Florence that I most want to return to. A day wasn’t nearly enough. No matter the size of the city, one thing was consistently the same – the food. The food was wonderful, no matter where we went. Always fresh, flavorful and made with surprisingly few ingredients.
I was very inspired by the foods I enjoyed in Italy, and it has definitely affected how I now prepare meals at home. This recipe for orecchiette with tomatoes, beans and spinach is a perfect example.

Orecchiette is a great pasta to use in your summer salads. The small ear shaped pasta holds up well to any ingredient or sauce.
You’re going to love how simple this pasta recipe is to prepare, and it is great for both lunch or dinner. I made this a vegetarian recipe, but if you want to make it a little more hearty you can substitute the bean protein for something like shredded chicken or sausage.
While the orecchiette is boiling, begin to sautĂ© some finely diced onion and garlic in olive oil. Add some cherry tomatoes and sautĂ© for several minutes. I like to gently press down on a few of the tomatoes with the back of a wooden spoon, to break the skin. Next you’ll add a can of white beans that has been drained. Any variety of white bean is fine. Cannellini and garbanzo beans are both great. At the end you’ll add the baby spinach and some additional liquid. I stirred about a teaspoon of flour into a cup of vegetable broth and then seasoned with salt and pepper.
This versatile pasta dish can be served warm or cold, although I do prefer to eat this while still a little warm.
This orecchiette pasta recipe is so versatile. You can easily add some additional veggies. Use whatever is fresh from your garden or farmer’s market. Squash would be a lovely addition.

Ingredients
- 12 ounces HemisFares Orecchiette Pasta
- 2 Tbsp. Olive Oil
- 4 cloves garlic, minced
- 1/2 Cup Small Diced White Onion
- 2 Pints Cherry Tomatoes
- 6 Ounces Fresh Baby Spinach
- 15 Ounce Can Cannellini or Garbanzo Beans, drained
- 1 Cup Vegetable Broth
- 1 Tsp. All-Purpose Flour
- Salt and Pepper, to taste
Instructions
- Prepare pasta according to package directions.
- Meanwhile, heat olive oil over medium-low heat in a large skillet. SautĂ© garlic and onion for 2 minutes. Add tomatoes and continue to cook an additional 2-3 minutes. Add beans and spinach and continue to stir and cook until spinach has softened, about 2-3 minutes.Â
- Stir flour into vegetable broth and add to pan. Add drained pasta to pan and stir to heat through. Add salt and pepper to taste.Â
