I grew up during a time when meat and potatoes were standard fare at dinnertime. I can only imagine how my Dad would have reacted if Mom had dared to serve him a kale salad or a quinoa burger instead of a steak, medium rare. Oh, the horror! It’s really something if you stop to think about just how much our palates have evolved over the years. I have an adventurous spirit when it comes to food that my parents and grandparents would have never dreamed of.

I remember when I first began to incorporated a meatless Monday into my meal planning, but now it’s not uncommon for my family to have several meatless meals throughout the week. In fact, my daughter and granddaughters prefer to skip the meat most meals. I love having packs of veggie burgers on hand to make sure we are getting enough protein.

My husband is a meat and potato (rice, pasta) person. I could do without it. When I make spaghetti, his first question is always about meat in the sauce or meatballs. I buy our meat on sale. If it’s full price I don’t touch it. I wish I could get him to try other things.
