This Fried Ice Cream Recipe creates one heavenly vanilla ice cream-stuffed golden dessert, drizzled with chocolate, and it’s so worth the wait.

Fried ice cream is impressive in its presentation, amazingly delicious, and definitely fun to eat. And believe me, kids just can’t wait to puncture that crispy shell and get to that feast of vanilla ice cream just hiding in there.
But moms, I caution you, unless you’re prepared to make kids wait the four-hour freeze time for fried ice cream, you might not want to mention that you’re making it, or your adventure might go something like this …
The other day, I was babysitting identical twin girls, aged three, named Chloe and Zoe, during their parents’ ski trip in Zurich. They were watching Paw Patrol, mouths all agape, just lost in dog car chases. And I decided that what we all needed was some more constructive activity … that perhaps all this TV watching was not so healthy … that we should, perhaps, make something together instead…
“Hey girls,” I whispered, just to see if I had the power to pull a three-year-old’s attention away from Paw Patrol.
“Yeah?” they said not turning from the TV, and that “yeah” was said with such doubt that I would say anything a. funny. b. interesting, or c. that didn’t bore them to tears that I decided to counteract with this enticement:
“Would you like to try some icy-cold-vanilla-ice-cream-that’s-been-fried-into-a-pastry, meaning, it’s kind of like-a-fried doughnut stuffed with ice cream…. and it looks like this!”
As their heads finally turned, I pointed to a strategically selected picture of fried ice cream being served on one of those glossy white plates, chocolate all a-spilling over that delicious ball of golden, crunchy delicious crust, with a shiny silver spoon descending through it to reveal the icy vanilla deliciousness within.
Screams of “YAYYYYYYYYYYY!” ensued, followed quickly by, “Let’s eat it right now.”
Fried Ice Cream: It’s Not Just A Treat, It’s An Adventure
Everything was going great. We’re scooping out the ice cream onto the baking sheet.
“And guess what we get to do now?” I asked.
No response.
“We wait two, count it, two hours for that ice cream to freeze the first time … And THEN, guess what we’re going to do?”
“I’m gonna go watch Paw Patrol,” I think Chloe said, rubbing her eyes. Zoe wails, “I thought you said this would be fun.”
“Well, I’m having a lot of fun.”

“No, Zoe,” Chloe said, “What it is … is SPECTACULAR!”
“No, Chloe,” Zoe said, “What it is … is the most super-yummiest-ever-ice-cream-in-the-world-I’ve-ever-had.”

This is an easy recipe to make ahead. You can do your two freezing sessions of the ice cream in the morning for a quick dessert to surprise them with in the evening! After you have fried your ice cream, you must eat this dessert immediately or refreeze it and thaw it for a cold version of this treat. But reheating this? Not possible.

Fried Ice Cream Recipe
Ingredients
- 1 quart vanilla ice cream
- 1 1/2 cups vanilla wafers
- 2 cups cornflakes cereal
- 1 teaspoon ground cinnamon
- 3 large egg whites
- Peanut oil for frying
Instructions
- Scoop ice cream into eight 1/2-cup-sized balls. Place on a baking sheet and freeze until firm, about 2 hours.

- Pulverize the vanilla wafers, cornflakes, and cinnamon in a food processor until coarse.
- In a separate bowl, beat egg whites until very foamy.
- Roll ice cream balls in egg whites, then in cornflake mixture, covering completely. If necessary, repeat to ensure a thick coating. Freeze again until firm, about 2 hours.

- Heat oil in a deep-fryer or large, heavy saucepan to 375 degrees F (190 degrees C). Use a slotted spoon to fry ice cream balls one at a time until golden, about 10 seconds each.

- Drain quickly on paper towels and serve immediately.
