I absolutely love Italian food, but for me that usually means a bowl of pasta dripping in melted cheeses.

I am so glad to say that this healthier Italian meal was just as, if not more, delicious and satisfying as that bowl of pasta. Making it even more appealing, this Italian White Bean Chicken recipe is a one pot meal!

Ingredients

  • 2 clove garlic, sliced
  • 4 boneless, skinless chicken breast halves
  • 4 zucchinis, sliced
  • 2 (15.5 ounce) cans white beans, drained
  • 2 roma tomatoes, chopped
  • 10 fresh basil leaves
  • salt and pepper to taste

Directions

Prepare a skillet with cooking spray and place over medium heat. Cook the garlic in the skillet until browned. Add the chicken and cook until slightly browned, about 3 minutes per side.

Stir in the zucchini and white beans into the skillet; cover and cook about 5 minutes. Scatter the chopped tomato over the dish; cover again and cook another 2 minutes. Add the basil leaves and cook 1 minute more.

Season with salt and pepper to serve.

    I like to make picadillo but make it with lots of diced vegetables and serve over black beans and rice.

    I don’t eat beef or pork so I am always looking for new creative recipes for chicken chili. This sounds wonderful with the squash. One of my favorite meals to make is roasted root vegetables with a salad & fresh bread.

    One of my favorite dishes to make is to bake tofu that has been marinated with some low-sodium soy sauce, sesame oil, and thai red chili paste and then sprinkled with either almonds or cashews (depends on what I have on hand). I serve it with some steamed veggies (broccoli, snow peas, and carrots) over jasmine rice. It is easy and healthy and delicious.

    I have been eating less carbs and love that my crock pot can come to the rescue. I have two favorites – Italian chicken and Black Bean chicken. Put you chicken and whatever veggies in the crock pot, cover with sauce and let ‘er go. I use boneless/skinless breasts, and the meat shreds with a fork when it is done. Love to make big pots of them and put up the extras. I have my Italian with spaghetti squash and just add a little cheese to the black bean chicken. Yummy!
