I absolutely love Italian food, but for me that usually means a bowl of pasta dripping in melted cheeses.

I am so glad to say that this healthier Italian meal was just as, if not more, delicious and satisfying as that bowl of pasta. Making it even more appealing, this Italian White Bean Chicken recipe is a one pot meal!

Ingredients

  • 2 clove garlic, sliced
  • 4 boneless, skinless chicken breast halves
  • 4 zucchinis, sliced
  • 2 (15.5 ounce) cans white beans, drained
  • 2 roma tomatoes, chopped
  • 10 fresh basil leaves
  • salt and pepper to taste

Directions

Prepare a skillet with cooking spray and place over medium heat. Cook the garlic in the skillet until browned. Add the chicken and cook until slightly browned, about 3 minutes per side.

Stir in the zucchini and white beans into the skillet; cover and cook about 5 minutes. Scatter the chopped tomato over the dish; cover again and cook another 2 minutes. Add the basil leaves and cook 1 minute more.

Season with salt and pepper to serve.

    I JUST realized how delicious bacon is. I know, I know. But seriously! I now add bacon to almost every meal. We make a lot of pasta, a big filler, and now with bacon its like…chicken alfredo from a 5 star restaurant! Mmm!

    I make my meatballs with gluten free breadcrumbs and flax, and pureed broccoli using grass fed beef, and organic, fresh tomato sauce. Feels decadent, but packs in that healthy punch.

    I take strips of zucchini and put them in a layer on bottom of 9×13 glass pan, cover with pasta sauce and bake until they soften. Then I sprinkle cheese on it and bake til golden. Then place that on top of cooked noodle. Yummy and Healthy dinner! 🙂

    MELT IN YOUR MOUTH CHICKEN
    Ingredients
    1/2 cup Parmesan cheese
    1 cup Greek yogurt -plain
    1 tsp garlic powder
    1 1/2 tsp Mrs. Dash (Garlic & Herb Blend)
    1/2 tsp pepper
    Italian seasoned dry bread crumbs
    4-6 average sized chicken breasts

    DIRECTIONS
    Preheat oven to 425°.
    Combine first 5 ingredients in medium bowl. Lightly season both sides of chicken with your choice of seasoning. ( I use Mrs. Dash, garlic powder, onion powder, & black pepper) & arrange chicken on a Pam sprayed baking sheet. Evenly top with Yogurt/Parmesan mixture, then sprinkle with bread crumbs. Bake until chicken is thoroughly cooked, about 20-25 minutes. So much better than fried!
