I absolutely love Italian food, but for me that usually means a bowl of pasta dripping in melted cheeses.

I am so glad to say that this healthier Italian meal was just as, if not more, delicious and satisfying as that bowl of pasta. Making it even more appealing, this Italian White Bean Chicken recipe is a one pot meal!

Ingredients

  • 2 clove garlic, sliced
  • 4 boneless, skinless chicken breast halves
  • 4 zucchinis, sliced
  • 2 (15.5 ounce) cans white beans, drained
  • 2 roma tomatoes, chopped
  • 10 fresh basil leaves
  • salt and pepper to taste

Directions

Prepare a skillet with cooking spray and place over medium heat. Cook the garlic in the skillet until browned. Add the chicken and cook until slightly browned, about 3 minutes per side.

Stir in the zucchini and white beans into the skillet; cover and cook about 5 minutes. Scatter the chopped tomato over the dish; cover again and cook another 2 minutes. Add the basil leaves and cook 1 minute more.

Season with salt and pepper to serve.

    Teriyaki Chicken is my healthy standby. I make it at least once a week, it’s quick, easy and delicious! I serve with rice and veggies.

    I love to make stuffed peppers
    I DON’t blanch the peppers
    I cook a package of Trader Joes Basmati Rice Mix with vegetables
    Chop up the top of the peppers
    Add tomato sauce (1 small can)
    Put this mixture into the peppers
    and cook
    a) on a rack (or aluminum foil rolled into a stick and put peppers on ) with a little water in a glass dish in the oven
    b) in a dutch oven
    voila
