Summer break is flying by much too quickly. I have taken a bit of a step back from work this summer to have more time with my family and it’s been marvelous. So far my granddaughters have had a pretty fun summer with a visit to Stone Mountain Park, Six Flags in Atlanta, and Hilton Head Island. I have been able to find some great deals for local activities to keep us busy all summer long.
In the midst of beach vacations, amusement parks and summer blockbuster movies, it’s the little things that seem to make the more meaningful and happy summer memories. Doing crafts projects together, having a few friends over for an impromptu pool party, sitting on the back porch talking about the summer books we are reading are all beautiful summer memories.
Becca and Maddie had fun making Duct Tape tote bags a couple of weeks ago.
Sometimes all you have to do is splash around in the back yard to have fun.
Whipping up a batch of our favorite peanut butter cookies creates good memories.
Then spread on the happy with Nutella to make out of this world sandwich cookies. That’s what I’m talking about! Want to make your own Peanut Butter and Nutella Sandwich Cookies?
Peanut Butter and Nutella Sandwich Cookies
ingredients:
1 cup sugar, plus 1/4 cup additional to roll cookies
1 stick butter, room temperature
1 egg
1 cup smooth peanut butter
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups flour
Nutella
directions:
Preheat oven to 375 degrees. Cover a baking sheet with a sheet of parchment paper or silicone liner. In a large bowl, cream together sugar and butter. Beat in the egg. Mix in the peanut butter and vanilla until mixture is smooth and creamy. Stir in salt, baking soda and flour until well combined. Roll dough into 1 inch balls and then roll in sugar. Place on baking sheet and flatten with fork. Bake for 12-15 minutes. Spread Nutella onto the flat side of one cookie. Place the flat side of another cookie onto the Nutella to form a sandwich.
This is that classic peanut butter cookie recipe that we have all been making forever, only taken up a notch with the addition of some creamy Nutella. Sandwich cookies are so much more fun!

We are going to Six Flags New England sometime in July! My kids are already so excited to go!
This summer we are doing a lot of traveling – pool time – Six Flags (we purchased season passes) just totally enjoying the warm weather – this past winter just about got us with it being so cold and so long! Good idea making sandwich cookies using Nutella! Perfect snacks for outings! I will be making some for the kids for our trip next week.

MY niece would LOVE those Peanut Butter Nutella cookies! I will have to make those for her for sure! We love playing out in the backyard I have a decent sized blow up pool and my son, nephew and nieces all enjoy it!

Nutella is the best thing ever. I found a brand at a health food store that has a bit less sugar and tastes just as great. Our summer is almost already full for every weekend. Thats what happens ever year as we only have kiddo on the weekends. So we pack it all into 2 days!

In just a few week we will be driving to San Diego (8 hour drive). We are going to take the girls to Sea World (they have never been). My girls favorite part of vacation is swimming in the pool at our hotel. My favorite part is to go to the Children’s pool in La Jolla. It used to be a part of the ocean where kids could swim but the seals have come to have their babies there. Last year when we went the babies had just been born so there were lots if seal mommas nursing their babies. It was breathtaking.

It is going by too fast! My son starts back to school 7 weeks from today, in fact. He spent a week at sleep away camp. We just got back this weekend from vacation at the beach and we are leaving tomorrow to visit my parents for a few days. Plus we’ve been going to the pool every day we can. As for those cookies… I am a Nutella addict and I must try those, soon!

Today we went to a county fair. I went on some rides with my daughter (all her choice) and then we shared a jumbo cotton candy with my husband. Love the peanut butter chocolate sandwiches!

My daughter loves Nutella. We have to buy her a new jar about every two weeks.
We create many summer memories mostly outdoors, we love bonfires and making smores, camping, biking, parks, & much more. We love the outdoors!! Any activity outside is where happy moments are created in our family.

Summer just started, kids have been out of school for a week now. I just bought a pool so we plan to do a lot of swimming, we went and rode Thomas the Train, we plan on going to the Zoo. Lots of Family BBQ’s and great games of Badminton, we love Badminton.
The Peanut Butter cookies reminds me of when I was little, I used to help my Grandma make peanut Butter cookies, we made all sorts of baked goods, it was a yummy time. I am going to make these with my kids… we love cooking together.
I love the activities you have accomplished this summer! We have unfortunately done nothing! We do little projects around the house with the children but this has been a very low income summer!
