I love putting my own spin on dinnertime and this sloppy joe casserole is a perfect example of that. Don’t have hamburger buns or bread in the house? No worries! With a box of spaghetti you can still enjoy all the great flavor of sloppy joes. This recipe is perfect for using up sloppy joe leftovers too!

Do you struggle with planning meals? I certainly do. I sometimes find it difficult to come up with something that everyone is going to like, that I can feel good about serving to my family. A dinner of lunch featuring sandwiches is something my entire family can agree on. Even my picky 11-year-old will chow down on a couple of sloppy joe sandwiches and I think she likes this sloppy joe casserole even more.

Sloppy Joes is the perfect lunch on weekends, especially when my daughter has friends over. A lunch made up of sloppy joe sandwiches, sweet potato fries, and salad is always a crowd pleaser.

If you have a large family, you can easily stretch this recipe to make more. That’s the beauty of a casserole.

What do you do with sloppy joe leftovers? You make a sloppy joe casserole, of course! This recipe is perfect for using up your sloppy joe leftovers. Just estimate how much pasta you need according to your leftovers. Don’t worry if it’s not exact. The beauty of a casserole is that anything goes!

Ingredients

  • 1 (16 ounce) can Sloppy Joe Sauce
  • 1 pound ground beef
  • 1 box prepared spaghetti noodles
  • ½ cup green onions, sliced
  • 1 cup grated Cheddar cheese

Instructions

Step 1: In a large saucepan, cook ground beef until no longer pink. Drain the grease. Add Sloppy Joe Sauce and stir until well combined. Warm through and remove from heat.

Step 2: Spray a 9 inch x 13 inch casserole dish with cooking spray. Lay the prepared noodles into the pan, in an even layer. Spoon the meat sauce over the noodles. Using a spoon work some of the sauce into the noodles, leaving most of the sauce on the top in an even layer. Sprinkle sliced green onions over and grated cheese over the top.

Step 3: Bake in a preheated 350 degree oven for 10 minutes.

This looks interesting. I actually don’t like spaghetti much, but I’d give this a try since it’s so different.
