I love putting my own spin on dinnertime and this sloppy joe casserole is a perfect example of that. Don’t have hamburger buns or bread in the house? No worries! With a box of spaghetti you can still enjoy all the great flavor of sloppy joes. This recipe is perfect for using up sloppy joe leftovers too!

Do you struggle with planning meals? I certainly do. I sometimes find it difficult to come up with something that everyone is going to like, that I can feel good about serving to my family. A dinner of lunch featuring sandwiches is something my entire family can agree on. Even my picky 11-year-old will chow down on a couple of sloppy joe sandwiches and I think she likes this sloppy joe casserole even more.
Sloppy Joes is the perfect lunch on weekends, especially when my daughter has friends over. A lunch made up of sloppy joe sandwiches, sweet potato fries, and salad is always a crowd pleaser.
If you have a large family, you can easily stretch this recipe to make more. That’s the beauty of a casserole.
