Roasted Green Beans and Mushrooms with balsamic is a fresh and delicious side dish, and the perfect accompaniment to your Thanksgiving turkey.

When it comes to holiday cooking I tend to opt for dishes that are made with fresh ingredients and are simple to prepare. This roasted green beans and mushrooms side dish fits the bill.

Like many of you, I grew up eating green bean casserole for Thanksgiving and Christmas. You know, the one with the crispy onions on top. In more recent years I’ve tried to get away from recipes that include cream of soups, and have been cooking with more fresh ingredients. Don’t get me wrong. I do still enjoy the occasional green bean casserole, but it’s this roasted green beans and mushrooms dish that will be gracing my table this Thanksgiving. As I prep for the holidays, I gave this recipe a trial run over the weekend and it is oh-so tasty.

This recipe couldn’t be any simpler. You just toss all the ingredients in a bowl, spread onto a baking sheet and let your oven do all the work. Be sure to read down to the bottom of this post for the recipe.

In addition to having the right ingredients, I’ve learned that it’s important to have the proper tools when prepping for the holiday. Ingredients
  

  • 1 pound fresh green beans trimmed
  • 8 ounces sliced fresh mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper

Instructions
 

  • Preheat oven to 425 degrees.
  • In a large bowl, toss together all ingredients, then spread out onto a 15×10 inch baking pan.
  •  Bake for 25 minutes.
