My low carb journey has begun. I first thought eating a low carb diet would be impossible for a bread and pastry loving girl like myself, but so far so good. Preparing delicious recipes like this Slow Cooker Chicken Fajita Soup is certainly making it easier. I don’t feel like I am missing anything when I eat this flavorful soup.
While I will no doubt still enjoy an occasional piece of my favorite Texas Turtle Sheet Cake or a bite (or two or three) of Chocolate Mousse, I think I will be quite satisfied eating low carb recipes like this one. This Chicken Fajita Soup is so easy to make in the slow cooker, and tastes great the next day. If you like fajitas you will enjoy this soup. It has all the same great flavors, minus the tortillas. If you are not on a diet like myself, you can load this up with toppings like avocado, shredded cheese, black olives, sour cream, and tortilla strips. The possibilities are endless. But if you are on a diet, no worries, because it’s delicious all on it’s own.
Low Carb Slow Cooker Chicken Fajita Soup
Ingredients:
3 boneless, skinless chicken breasts
32 oz. chicken stock
1 (14.5 oz.) can diced tomatoes
1 medium yellow pepper, diced
1 medium red pepper, diced
1 medium onion, diced
2 cloves garlic, minced
6 oz. mushrooms, thinly sliced
1 (8 oz.) package McCormick Taco with Chipotle & Garlic Skillet Sauce
1 tbs. season salt
2 tbs. fresh cilantro, chopped
Pro Tip: Slow Cooker liners make clean up a breeze. I recommend them to anyone. I mean, the whole point of a slow cooker is the convenience. You can get these for a steal.
Directions:
Except for the fresh cilantro, add all ingredients to the slow cooker. Cover and cook on low for 6 hours.
Using two forks, shred the chicken breasts. Gently stir in fresh cilantro, cover, and continue cooking for an additional hour.

This looks great! I was really sad when I realized that many of the soups I thought were low carb actually have a bunch. I think because of thickeners. I will have to try this soon!

This soup sounds wonderful. I just got my first slow cooker and haven’t used it yet. I’ve got some slow cooker cookbooks, but this sounds wonderful, and I’d love to make it!
