This recipe for southern pulled pork shooters with cheese grits and creamy coleslaw got its inspiration that way. A few years back, before I was living in Central Florida, I was in Orlando on family vacation. We went to a well know BBQ restaurant, and I had something that they call a Six-Shooter. It has been stuck in my head ever since! Basically, it was a cup filled with layers of cheesy grits, brisket, coleslaw and jalapeno. YUM. I finally got around to making my own version of this dish. It only took me a few years to get around to it.

This is one of those recipes that will WOW your friends, but it comes together very simply. If you’ve spent any amount of time reading this blog, you know I like to keep things simple. Most of my recipes are semi-homemade or include some kind of shortcut. Kitchen shortcuts are a wonderful thing if they don’t take away from the deliciousness of the recipe. Litehouse Coleslaw Dressing is my secret ingredient for these pulled pork shooters.

I used this easy slow cooker pulled pork recipe, but you could alternately buy prepackaged pulled pork or even pick up a to-go order from your favorite local BBQ joint. I won’t tell!

I’m super picky when it comes to coleslaw. The ready-made stuff you get from the grocery deli department just doesn’t cut it. I like my coleslaw to taste fresh and have some crunch, which is something it loses after sitting for a while.

Southern Pulled Pork Shooters with Cheese Grits & Creamy Coleslaw

yields: 10 servings.

Ingredients:

2 pounds pulled pork, already prepared (Use your favorite recipe or mine.)

16 ounce bag coleslaw mix
16 ounce jar Lighthouse Coleslaw Dressing

4 Cup(s) Water
1 Cup quick grits
1/2 cup grated Cheddar cheese
salt and pepper to taste

1/2 cup diced dill pickle

You’ll need 10 (9 ounce) clear plastic cups.

Directions:

Prepare pulled pork. Set aside.

Prepare the coleslaw. In a large bowl combine coleslaw mix and Litehouse Coleslaw Dressing. Refrigerate until ready to assemble shooters.

Prepare cheese grits. Bring water to a boil. Slowly stir in grits. Return to a boil and reduce heat to medium-low and cook 4-5 minutes or until thickened, stirring occasionally. Stir in cheese, until just melted.

Assemble the shooters. In the bottom of each cup, spoon in a scant 1/2 cup of cheese grits. Top with a layer of pulled pork, about 1/4 cup. Add a layer of coleslaw to the top, and sprinkle with diced pickles.

    At first, when I saw the picture above, I thought it was some kind of dessert until I saw the diced peppers on top. My husband loves pork!! I wish he liked cheese!
