I got so excited when the first watermelons of the season started showing up in my supermarket. Watermelon is one of those seasonal foods that my family just can’t get enough of, and something about it just screams summer to me. We had a little backyard garden party yesterday, and I served up my favorite watermelon lemonade recipe.
Watermelon lemonade is the perfect ending to a hot summer day. With Memorial Day just around the corner, I thought this would be the perfect time to share the recipe with you.
Watermelon Lemonade Recipe
Ingredients:
1/2 cup white sugar
1/2 cup water
2 cups fresh lemon juice
4 cups watermelon juice, strained (about 3/4 seedless watermelon)
4 cups cold water
1 cup blueberries (optional)
Directions:
Place cubed watermelon into a blender. Cover, and puree until smooth. Strain through a fine mesh sieve. (I use about 3/4 of a seedless watermelon to get 4 cups of juice.)
Make simple syrup by bringing sugar and 1/2 cup water to a boil in a saucepan over medium-high heat until sugar dissolves, about 5 minutes. Remove from heat. If you want, the syrup can be made ahead and refrigerated in a glass jar for up to 1 month.
Stir together 4 cups of water,lemon juice, watermelon juice, and simple syrup. Optionally, stir in 1 cup fresh or frozen blueberries. Serve chilled.
