When I posted a picture of this Pickle Bites appetizer to Instagram the other day, I learned that I’m not the only one who likes to make this simple 3 ingredient appetizer.

One person suggested using ham instead of my usual corned beef, and I will definitely be trying that next time around. That’s one of the things I love about sharing recipes on the blog – it’s all the wonderful feedback and ideas I get from readers.
These pickle bites couldn’t be any easier to make, although it’s been a while since I whipped up a batch. They seem to start appearing around here when the grilling season starts up. If you’re a fan of the dill pickle, you’re gonna love this simple appetizer. It’s always such a crowd pleaser around here.
Ingredients:
- sliced corned beef from the deli (about .5 pound should do)
- dill pickles
- herb cream cheese spread (I typically use the Philadelphia Chive and Onion spread.)
Instructions:
Step 1: Spread approximately one tablespoon of cream cheese onto each slice of deli meat. Place a dill pickle at one end of a slice of meat, carefully roll until the deli meat is completely wrapped around the pickle. The cream cheese will bind it all together.
Step 2: Using a knife, cut the rolled pickle into 1/2 inch slices. Serve immediately or store in the refrigerator.

Goodness this is so simple but I can tell it will taste fabulous. My son loves pickles so I’m going to make some of these up.
This sounds delicious and so easy. I can see switching other meats , for example smoked turkey would be very good in this recipe.
I make these sort of, I use ham thinly cut and asparagus. Or sweet pickles .. Yum now I need to make them this weekend. .
