You guys have got to try this delicious No-bake French Vanilla Chocolate Eclair recipe! It is one of my favorite comfort foods and is easy as pie to make! Actually I don’t think pie is very easy to make so I’m not sure where that saying came from but I promise you this one is super easy. This is great for pot lucks, holidays or even just a great after dinner snack. Serve it up with a big glass of milk and your family will be sure to gobble it up.
There are tons of variations that you can make on this recipe by just switching out the type of pudding you use and maybe adding some wonderful toppings to the top when served. I do have to say that I have tried many ways to make it and nothing compares to this one! Enjoy!
No-Bake French Vanilla Chocolate Eclair
Ingredients For the “cake”
2 (3.4 oz) boxes French vanilla instant pudding
3 cups cold milk
1 medium container cool whip (or 1 1/2 small containers)
box graham crackers
Directions
1) In a medium bowl combine both boxes of pudding and the 3 cups of cold milk. Mix well until the pudding becomes thick. Stir in the Cool Whip.
2) Line the bottom of a 9×13 cake pan with graham crackers. Spread half of the pudding mixture over the top of graham crackers. Place another layer of graham crackers and spread the remaining pudding mixture on top of that.
3) Place “cake” in the refrigerator while making the icing.
Ingredients for the icing
1 cup sugar
1/3 cup cocoa
1 teaspoon vanilla extract
1/4 cup milk
1 stick butter
Directions
1) Bring sugar milk and cocoa to a slow boil in a medium sauce pan. Cook 1 minute and remove from heat. Quickly add in butter and vanilla (when you add in the vanilla extract it will bubble so don’t be startled) and blend well. Keep beating until thick.
2) Grab your “cake” out of the fridge and pour icing over the top and spread evenly. Chill at least an hour before serving.
3) Enjoy! The End.

You include Cool Whip in the ingredients, but not in the directions. Should it be combined with the pudding mixture???

What’s a small cup? Did you mean two small packets?
