Ingredients
  

Cake:

  • 3/4 cup oil
  • 1 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup sour cream
  • 4 ounces cream cheese softened
  • 2 eggs
  • 1 cup buttermilk*
  • 1 teaspoon vanilla
  • 3 1/2 cups cake flour**
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 ripe bananas mashed
  • 1/2 cup chopped nuts
  • 1 cup quick oats

Cream Cheese Frosting:

  • 4 ounces cream cheese softened
  • 4 tablespoon butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 375. Spray or grease 9×13 glass pan.
  • In a large bowl, mix together oil and sugars. Use an electric mixer to blend in sour cream and cream cheese. Beat in eggs until well blended. Stir in buttermilk and vanilla.
  • In a separate bowl, stir together cake flour, baking powder, baking soda, and salt. Mix into wet batter.
  • Gently fold in bananas, nuts, and oats.
  • Spread into 9×13 pan. Bake at 375 for 35 minutes. Let cool.
  • Prepare the Cream Cheese Frosting. To make the frosting, Using electric or stand mixer, blend all ingredients together until smooth.
  • Frost top of the cake with cream cheese frosting.

Notes

* If you do not have buttermilk on hand, pour 1 tbs white vinegar into measuring cup. Add enough white milk to make 1 cup. Let sit for 5 minutes before adding to recipe. ** All purpose flour can be substituted. The amount needed may vary by 1/2 cup in either direction. The batter should be easy to spread and self leveling, but not runny.
