Our hearty Chicken Parmesan Soup—A Delicious Twist On A Classic Italian Dish—is the perfect remedy for when you’re feeling in need of comfort in a bowl.

We’ve all heard of the restorative merits of a steaming bowl of chicken soup when we’re feeling under the weather, but this hearty classic is so much more than a remedy for the sniffles. In fact, chicken soup can pretty much be the perfect antidote for all that life throws at us. Shattered relationship? Cuddle up to a bowl of chicken soup and turn on a funny movie. Bad day at work? Sip on a bowl of chicken soup and plan your next day off. Rainy day? Make a big pan of chicken soup, and remember that the sun will shine again.
The great thing about chicken soup is that it lends itself to myriad variations. Take our recipe for this chicken soup inspired by the classic chicken Parmesan, for example. The soup gets its zesty flavor from garlic, Italian seasoning, and a dash of ground red pepper, but the true magic comes in the form of plenty of savory Parmesan and a scattering of mozzarella when serving. Who would’ve thought that a cheesy chicken soup borrowed from an Italian-American classic could be so good? The tomatoes give the soup brightness and subtle acidity, while pasta makes the soup satisfying and perfect as a meal all on its own.

Make it your way
Instead of rotini or penne, feel free to use any small pasta variety in this recipe. Ideal options include farfalle, ditalini, and orecchiette. For extra fiber, you may want to opt for a whole-wheat pasta, and if it’s more protein you’re after, try using a pasta made from legumes, such as chickpeas or lentils. If you don’t have canned tomatoes, fresh will work just as well. You’ll need about two cups for this recipe. Want to up the nutritional profile? Stir in a few handfuls of chopped spinach toward the end of the cooking time. After all, one can never have too many greens! Have some mushrooms? Slice them up and throw those in, too. And finally, if you don’t have chicken on hand, turkey is an equally delicious option.
How do I store leftovers?
Once cooled, transfer leftovers to an airtight container and store in the fridge for up to 3 days. You can also freeze the soup in a freezer-safe container for up to 3 months. Thaw overnight in the fridge. Gently reheat the soup on the stovetop until piping hot.

Serving suggestions
Bake up a loaf of our delicious Olive Bread to serve alongside this soup, preferably drizzled with some peppery olive oil. We also love a bowl with a few of our crisp and golden Peppered Cheese Crackers.
