Chicken Parmesan Soup, made in a Crock-Pot® slow cooker, is a delicious twist on a classic Italian dish. Now that school is back in session, you might find yourself desperate for some simple weeknight recipes. Slow cooker recipes are perfect for busy weeknights, and this one couldn’t be any simpler. Not to mention, it’s oh-so delicious. This recipe has all the same great flavors that you get in the classic Italian Chicken Parmesan dish. Only this version is a whole lot simpler to make. In fact, you probably already have all the ingredients for this recipe in your kitchen. Don’t you love a recipe that’s easy AND delicious?!

The air will soon be crisp, and this is the perfect meal for a fall or winter evening. I use my Crock-Pot® slow cooker so much this time of the year. It pretty much stays on my kitchen counter. It’s great for making those soups you crave on a cold day or for game day snacks.

Chicken Parmesan Soup
Ingredients:
3 cloves garlic, minced
1 green bell pepper, chopped
½ cup chopped white onion
1 can (14.5 ounces) diced tomatoes
2 boneless, skinless chicken breasts
3 cups chicken broth, plus more if needed
½ cup Parmesan cheese
1 teaspoon Italian seasoning
⅛ teaspoon ground red pepper
4 ounces (uncooked) penne or rotini pasta
½ cup shredded Mozzarella cheese, for topping
Chopped fresh parsley, for garnish
Directions:
In Crock-Pot® slow cooker, stir together garlic, bell pepper, onion, diced tomatoes, chicken breasts, chicken broth, Parmesan cheese, Italian seasoning and ground red pepper. Cook on high for 3 ½ hours or on low for 7 hours.
Transfer chicken to a cutting board and shred into bite size pieces. Return chicken to Crock-Pot® slow cooker and stir in pasta. Cook on high 30 minutes, or until pasta is al dente.
At this time, if soup is too thick, add some additional chicken broth and warm through.
Serve garnished with shredded Mozzarella cheese and chopped parsley. This recipe will easily feed a family of up to 5 or 6. As long as you don’t overcook the noodles, it’s great for leftovers.
