These homemade brownies are so delicious they seem otherworldly.

I bet you cannot answer this question honestly, even if you want to:

How long has it been since you have had a completely homemade brownie?

Now, the sound of crickets is becoming loud there, right?

Because if we’re really talking completely homemade brownies, and not just opening up a box of Duncan Hines’ Brownie Mix, maybe you’ve never, and I mean never-ever, had the ooey, gooey, yummy, decadent, meltingly delicious flavor sensation that is a homemade—and I mean a homemade with a capital “h” —from scratch brownie.

Because if you have not, my dears, you are certainly missing something in your life. You haven’t really lived until you have had a warm, chocolatey homemade brownie coated with rich, fudgy icing with the coldest of glasses of milk (or a hot, homemade brownie fresh from the oven with a scoop of vanilla ice cream).

Homemade brownies are so warm, chocolatey, sweet, moist, darkly delicious, and decadent. There’s absolutely no reason why you shouldn’t run—not walk—to your kitchen right now and whip up some of these for you and your family.

Because brownies made from scratch bring a whole new dimension of flavor to the treat that is known as brownies, making them taste oh-so-luscious with that glossy, fudge-y icing that tops them.

There’s nothing a brownie doesn’t taste good with either; I can tell you this from personal experience—in fact, in very recent personal experience, I baked a pan of these to see how well they would freeze ahead for Ms. Harper’s party. They froze just fine, thawed just fine, and baked really fine from frozen after being thawed, at which time they were topped—and tasted AMAZING with all of the following: peanut butter spread across them at 3 a.m., strawberry jelly plopped atop one at 3:30 a.m., and one whipped cream container which just had about half left in it. Well, they tasted marvelous when raked through that, too.

And these homemade, chocolate Cosmic Brownies are a fun and delicious way to tell your entire family you love them. In fact, tell them you made these homemade Cosmic Brownies because they are your moon and stars.

These Cosmic Brownies are my new favorite brownie for all things kids. Kids’ pool parties, kids’ birthday parties, kids’ after-school snacks, kids’ lunch treats, kids’ dinner desserts—and nothing on the planet Earth says I’ve done a good job as much as the shining smiles of children all smudged with chocolate icing.

Both kids and adults love these Cosmic Brownies because they are homemade chocolate decadent deliciousness in a brownie. And no wonder they’re delicious—they’re made with good things to eat, like butter, chocolate, vanilla, brown sugar, heavy cream, flour, eggs, and cocoa. All natural ingredients and a long list of them like this means one major thing: these are going to be stellar.

And they’re yours in less than 45 minutes, so scoot!

How to Make Ahead and Store?

Store the brownies in an airtight container for 3 to 4 days at room temperature or for up to one week in the refrigerator. You can freeze brownies for up to three months.

The other day, when planning a party for Ms. Harper, who loves all things brownie— we decided to have a whole Brownie Bar with “fixins” for kids who wanted to make an ice cream, brownie sandwich, or sprinkle M&Ms all over their brownies (also, Oreos, whipped cream, nuts, strawberry topping, and, of course, brownies). For Harper’s party, we’re having a feast of kid’s party favorites: Buffalo Chicken Pizza (no peppers)—ten of these. A whole lot of Viral Smash Burger Tacos and Loaded Tochos. That is, so far. She has all week to change her mind again, though (smile).

Ingredients
  

  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 1/2 cup packed light brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup rainbow candy-coated chocolate chips

Instructions
 

  • Preheat oven to 350°F. Line a 9×13-inch baking pan with parchment paper.
  • In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until well combined.

  • Add eggs and vanilla extract, mixing until fully incorporated.

  • Sift in cocoa powder, flour, and salt, mixing just until combined. Avoid overmixing.

  • Pour the batter into the prepared pan, spreading evenly.

  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean.
  • Let brownies cool completely in the pan on a wire rack.
  • For the ganache: Place chocolate chips in a bowl. Heat heavy cream in a pan on the stovetop until it just begins to simmer, then pour over chocolate chips. Let sit for 3 minutes, then stir until smooth.

  • Spread ganache over cooled brownies. Sprinkle rainbow candy-coated chocolate chips on top.

  • Refrigerate for about 30 minutes to set the ganache before slicing into squares.
