But, between you and me, the first time I spotted this online, I was like, “Wait, what?” Don’t get me wrong, I was totally intrigued, but also, just a li’l bit skeptical. The closest thing I ever made to this was my Sloppy Joe Burgers. The whole idea of blending the yum-factor of a good, juicy burger with the light and zesty vibe of our trusty taco seemed almost too wild. But hey, I was game, gave it a shot, and it was so worth it!

It’s basically our classic Smash Burger (you know – scrumptiously seasoned beef, seared till crispy, covered with outrageous toppings) but served in a soft, fluffy tortilla instead of the usual bun. Ingredients

THE BURGERS:

  • 1/2 lb. ground beef
  • 2 small flour tortillas
  • 2 big tomatoes, chopped
  • 1/4 cup mozzarella cheese, shredded
  • 4 tbsp burger sauce
  • ½ cup lettuce, shredded
  • 1 tbsp extra virgin olive oil
  • pinch of salt and pepper

THE BURGER SAUCE:

  • ½ cup mayonnaise
  • ½ cup ketchup
  • 6 dill pickles, chopped
  • ground black pepper

Instructions

  • Season the ground beef with salt and pepper. Press a thin layer of the beef mixture onto the tortillas.

  • Preheat a skillet on MEDIUM-HIGH heat. Add a bit of the olive oil and place one tortilla with the beef side down. Smash it using the bottom of a saucepan. Cook it for 5 minutes.

  • Flip the tortilla and place the shredded mozzarella cheese on top of the beef. Place a lid on and cook for another 2 minutes. Remove it from the pan and repeat with the other tortilla.

  • To make the sauce, combine the mayonnaise, ketchup, and chopped dill pickles in a small bowl. Season with the ground black pepper.
  • Assemble your smash burger tacos. Top with the lettuce, chopped tomatoes, and burger sauce. Then fold and serve warm!
