Keep the cooked beef-and-tortilla bases in an airtight container in the fridge for up to 3 days. The lettuce, tomatoes, and sauce should be stored in their own containers to prevent sogginess. Reheat the tacos in a dry skillet over medium heat until warm and re-crisped, then top with the fresh veggies and sauce before serving. Avoid microwaving; it softens the tortillas and takes away that signature smash burger texture.

Ingredients
  

For The Burger Tacos:

  • ½ pound ground beef
  • Pinch of salt and pepper
  • 2 small flour tortillas
  • 1 tablespoon extra-virgin olive oil divided
  • ¼ cup mozzarella cheese shredded
  • ½ cup lettuce shredded
  • 2 large tomatoes chopped

For the Burger Sauce:

  • ½ cup mayonnaise
  • ½ cup ketchup
  • 6 dill pickles chopped
  • Pepper

Instructions
 

  • Season the ground beef with salt and pepper. Press the beef mixture onto the tortillas in a thin layer.
  • Preheat a skillet over medium-high heat. Add half the olive oil and place one tortilla, beef side down, in the skillet. Smash it using the bottom of a saucepan. Cook for 3 minutes.
  • Flip the tortilla and sprinkle the shredded mozzarella cheese over the beef. Cover the skillet and cook for 2 more minutes. Remove from the pan and repeat with the remaining olive oil and the other tortilla.
  • To make the sauce, combine the mayonnaise, ketchup, and chopped pickles in a small bowl. Season with pepper.
  • Assemble your smash burger tacos. Top with lettuce, chopped tomatoes, and burger sauce. Serve warm.
