Irish Soda Bread is hands down the world’s best no yeast bread. This savory version is flavored with dried rosemary. It’s called Irish Soda Bread because it is made with baking soda, instead of yeast. Because of this it is more dense and rustic than your normal sandwich bread. While it is dense in texture, it still has an aerated crumb and a terrific crust that I love.

There’s something cathartic about baking bread. The feel of dough in your hands and wonderful aroma of fresh bread baking in the oven is comforting. Plus, a good bread baking session can be very physical too, helping to release pent up tension while you knead the dough.

It doesn’t have to be St. Patrick’s Day to enjoy Irish Soda Bread. It has been really hard to find yeast in the grocery store lately which is why I decided to share this no yeast bread recipe now.

Easy No Yeast Bread

While so many people think it is too hard to make bread at home. Since traditional bread requires rising time, it seems overwhelming. This bread is considered a quick bread that doesn’t need the rise time.

How to Serve No Yeast Bread

This bread can be served as is or toasted with just a little butter and jam, if you like. It can also be served with dinner as garlic bread with pasta or paired with soup. Though not ideal, this bread can even be used to make sandwiches.

How Long Does Homemade Bread Last

Homemade bread does not have the preservatives that store bought bread has so it will only stay fresh for a few days. Most homemade bread will start to get mold after 3 days. Be sure to keep the bread covered well and wrapped in plastic wrap.

What Makes This Bread Rise

This bread is a quick and easy bread. It rises using baking soda and vinegar. Since there is no yeast, you do not need to wait for it to rise. The bread is dense on the inside but crusty on the outside.

Ingredients:

  • 4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ⅛ teaspoon pepper
  • 1 teaspoon dried rosemary
  • 3 cloves garlic, minced
  • 1 ½ teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • 1 ½ cup water, room temperature
  • 2 teaspoons vinegar (white or apple cider)
  • 1-2 tablespoon milk
  • 1 tablespoon butter, melted

Instructions:

Step 1: Preheat the oven to 400 degrees F.

Step 2: Combine dry ingredients: In a bowl, stir together the flour, sugar, baking powder, baking soda, salt, pepper, rosemary, and garlic.

Step 3: In a small bowl, combine the water and vinegar. While stirring, add the water mixture to the flour mixture. Stir the mixture until a dough forms.

Step 4: Turn the dough out onto a floured surface. Knead the dough for 2-3 minutes to make sure all the ingredients are incorporated.

Step 5: Shape the dough into a flat, round disk no more than 1 1/2 inches high. Place the dough on a baking sheet, pizza stone, or into a large cast-iron skillet. Dip a sharp knife into flour then cut a fairly deep “X” on top of the loaf.

Step 6: Place the pan in the oven and bake at 400 degrees F for 30-40 minutes or until golden brown and the crust is firm. Halfway through baking time, brush the top of the loaf with milk for a softer crust.

Step 7: When the bread is done, remove it from the oven, and while still hot brush it with the melted butter. The butter will add flavor as well as soften the crust.
