This flavorful and easy-to-make pulled chicken in red sauce is perfect for a busy week night. Serve it with your favorite pasta for a complete meal.

Easy Pulled Chicken in Red Sauce

I do have a couple of favorite chicken recipes that I seem to go to again and again. Recipes like Chicken Enchiladas in White Sauce and this oh-so comforting Chicken Noodle Casserole. Even with these favorites, I am always looking for new ways to prepare chicken and this recipe is a winner. You can even make this in your slow cooker. It doesn’t get much simpler than that.

Easy Pulled Chicken in Red Sauce

Ingredients:

  • 2 large chicken breasts or four smaller ones
  • 1 jar of your favorite red sauce, I prefer tomato basil, any quality sauce will work nicely though.
  • 1 cup of organic flavorful tomatoes
  • 4-8 fresh basil leaves
  • 2-4 fresh garlic cloves
  • Himalayan salt or sea salt and pepper to taste

Directions:

Step 1: Using the lowest setting on your stove (or slow cooker), pour the tomato sauce in and start to heat.

Step 2: Trim the chicken breasts and add into the sauce.

Step 3: Wash and chop the tomatoes, basil and garlic cloves, then add to the pot.

Step 4: Using flavorful, organic tomatoes really makes this simple dish taste incredible.

Step 5: Cover and simmer for 3- 6 hours (final amount of time will depend on the size of the chicken pieces and the actual cooking temperature). Stir occasionally and scrape down the sides.

Step 6: When the chicken is fall apart tender, use two forks to pull apart and shred or put the chicken in your stand mixer and carefully turn it on low. Using the whisk attachment in the mixer will very quickly shred the chicken perfectly and with almost no effort.

Step 7: Return the chicken into the sauce. Turn off the heat and let rest for about 15 minutes before serving. This is spectacular over pasta, in sandwiches, on pizza… This also freezes incredibly well.

Step 8: Don’t you want to just dig a fork into that? No worries. This pulled chicken with red sauce is so simple to make for yourself. Turn on the stove top, pour yourself a glass of wine and enjoy!
