So many of my friends are kicking off the new year with a keto diet. While I’m not joining them this year, I still have quite a few keto-friendly recipes that I haven’t shared on the blog. This keto pizza recipe really helped me stay on track last year when I was closely watching my carbs.

I’m not currently on a keto diet, but have eaten keto or low carb on and off for years. I love the energy I had on keto, but don’t have the mindset to stick to it right now. I am watching my carbs though. One of the things I struggled with on keto was missing some of my favorite foods, one of which is pizza. I know I am not the only one. I have a lot of friends who tell me they would love a Keto Pizza recipe, preferably a keto pepperoni pizza recipe and I am happy to say, I have the perfect recipe. This recipe for Keto pizza is going to be exactly what you want when those pizza cravings hit.

Keto Pizza Bread

The problem with regular pizza is the dough. It is heavy in carbs. Whether you are looking for a keto pizza dough recipe or for gluten-free pizza dough, this recipe for cloud dough makes the perfect pizza crust. There are no substitute flours like with many recipes. There is no need for almond flour or coconut flour. This keto pizza dough is made from eggs and cheese. It is light and delicate and makes the perfect keto pizza dough.

What is Cloud Bread?

Cloud bread is like a substitute bread that is keto friendly. It isn’t the same consistency as bread. However, it is light and fluffy. It uses no flour, not even low carb versions like almond or coconut. Sometimes it might be called oopsie bread as well.

Is it Really Pizza?

Actually no. Using the cloud dough, you are making a pizza-like meal. The cloud dough has an airy texture and is made with cheese. When you mix the tastes of the cheese and the pepperoni, it is very similar to pizza. It can certainly help with pizza cravings. You can use a low sugar tomato sauce or pizza sauce to dip the Keto Pepperoni Pizza Cloud Bread in. This gives an even more pizza-like taste.

How Long Does it Take to Make Keto Pizza?

When making this keto dough, it only takes a few minutes to form the dough. Unlike traditional bread that takes hours of kneading and rising, this keto pizza dough comes together in a matter of minutes. Then after folding in the pepperoni, it is baked for 10-15 minutes until the bread is golden brown.

Ingredients:

Prep Time: 10 minutes

Cook Time: 10-15 minutes

Servings: 4

Ingredients:

  • ½ c Parmesan cheese grated
  • 2 Eggs
  • 1 c Mozzarella cheese shredded
  • ½ tsp Garlic powder
  • ½ tsp Basil
  • ⅓ c Chopped pepperoni slices

Instructions:

Step 1: Preheat the oven to 350 degrees.

Step 2: In a mixing bowl, beat the eggs until they become light and frothy.

Step 3: Add in the garlic powder and basil, and mix to combine.

Step 4: Mix in the parmesan cheese and mozzarella, stirring to completely combine.

Step 5: Fold in the chopped pepperoni slices.

Step 6: Place 4 large spoonfuls of the mixture onto a parchment lined baking sheet. Form each mixture into a flat round shape.

Step 7: Bake for 10-15 minutes until the cloud breads are browned and cooked through.
