Throw a mint sprig on the plate and you can serve it by itself at any fancy French restaurant. You can call it Brownie à l’infusion de menthe or something like that (big smile).
But seriously, one of the great things about these brownies is that kids love, love, love these because kids love things with things wrapped inside them, like presents. And this mint layer is one delicious present that’s tucked inside the present of a super-moist brownie that is iced with one of the fudgiest icings you’ve ever tasted. So, three presents! These Mint Chocolate Brownies With the Best Icing Ever, as I like to call them, are kind of like those never-ending nesting Russian Matryoshka Dolls in that the surprises just never stop; there’s one amazing surprise after another.

Sometimes, you want not just chocolate—but MINT chocolate. Why? Only the gods know these things. But perhaps it is because the cool, crisp flavor of mint is just meant (I could not resist that, no I could not) to be paired against rich, semi-sweet chocolate because it makes the flavors of the mint and chocolate taste distinctly more delicious—both of them.

You can keep these brownies for about two days at room temp or seven days in the refrigerator. I keep them in a cake keeper with a glass dome just so everyone can walk by and enjoy their beauty—and perhaps be tempted to steal one. You can also freeze these for up to three months. For best results, freeze then frost, or your frosting will not be as amazing as if you prepared it day of—but still delicious. It’s hard to make something this yummy not taste delicious.

Mint Brownies
Ingredients
- 1 cup unsalted butter melted
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups powdered sugar
- 1/4 cup unsalted butter softened
- 1 1/2 teaspoons peppermint extract
- 1-2 tablespoons milk
- 1 cup semi-sweet chocolate chips
- 5 tablespoons unsalted butter
Instructions
- Preheat oven to 350°F. Line a 9×13 inch baking pan with parchment paper.
- In a large bowl, mix melted butter, granulated sugar, and cocoa powder until combined. Add eggs and vanilla extract, mixing well.

- Stir in flour and salt until the batter is smooth. Pour into the prepared baking pan.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out mostly clean. Allow to cool completely in the pan.

- For the mint layer, beat together powdered sugar, softened butter, peppermint extract, and milk until smooth. Spread evenly over cooled brownies.

- For the chocolate topping, melt chocolate chips and butter together in the microwave or over a double boiler until smooth. Pour over the mint layer.
- Refrigerate for at least 1 hour to set the chocolate. Cut into squares before serving.
