Sometimes, only the flavors of mint and chocolate will do, and if you’re looking at that picture right there, I bet this is one of those times.

Mint Brownies

These luscious, delicious, and gorgeous Mint Chocolate Brownies are my new favorite dessert to serve for any occasion because they are not only stunning in appearance—they’re a fun, amazingly delicious, and colorful addition to any soirée, no matter how fancy. Throw a mint sprig on the plate and you can serve it by itself at any fancy French restaurant. You can call it Brownie à l’infusion de menthe or something like that (big smile).

But seriously, one of the great things about these brownies is that kids love, love, love these because kids love things with things wrapped inside them, like presents. And this mint layer is one delicious present that’s tucked inside the present of a super-moist brownie that is iced with one of the fudgiest icings you’ve ever tasted. So, three presents! These Mint Chocolate Brownies With the Best Icing Ever, as I like to call them, are kind of like those never-ending nesting Russian Matryoshka Dolls in that the surprises just never stop; there’s one amazing surprise after another.

Why You and Your Family Will LOVE Mint Chocolate Brownies

Sometimes, you want not just chocolate—but MINT chocolate. Why? Only the gods know these things. But perhaps it is because the cool, crisp flavor of mint is just meant (I could not resist that, no I could not) to be paired against rich, semi-sweet chocolate because it makes the flavors of the mint and chocolate taste distinctly more delicious—both of them.

And these brownies are so decadently rich and feature one of the glossiest, most delicious chocolate icings I’ve ever had. Indeed, this icing would be welcome on just about anything, from a good cake to pretzels.

How to Make Ahead and Store?

You can keep these brownies for about two days at room temp or seven days in the refrigerator. I keep them in a cake keeper with a glass dome just so everyone can walk by and enjoy their beauty—and perhaps be tempted to steal one. You can also freeze these for up to three months. For best results, freeze then frost, or your frosting will not be as amazing as if you prepared it day of—but still delicious. It’s hard to make something this yummy not taste delicious.

Serving Suggestions

After a spicy dinner of, say, Buffalo Chicken Meatballs served with Classic Blue Cheese Dip or homemade Avocado Ranch Dip—they both taste a-maz-ing with those buffalo chicken meatballs.. and may I just add that these two together are so yummy that I might have to 12 Step this situation—big smile). Anyway, after a spicy dinner of something scrumptious like those with, say, some Crispiest Air Fryer Onion Rings Ever, there’s nothing better than one of these Chocolate Mint Brownies, a glass of cold milk, and a dish of vanilla ice cream. Your family is so happily spoiled! And, by the way, I suggested the onion rings because they ALSO taste amazing with both of those dips.
