I was recently feeling that way and decided to give my family something new to try. I took asparagus, which has a number of health benefits and only 20 calories per 1/2 cup, and flavored it with garlic before baking it in the oven. Once it was done, I sprinkled some parmesan cheese on top for additional taste.

The result was an easy to make side dish ready in less than 20 minutes that everyone enjoyed! I recommend you try it with a steak or chicken main course, but it could go with others, too.

Ingredients
- 2 bunches asparagus, trimmed to remove the woody ends
- 2 tsp olive oil
- ½ to 1 tsp garlic powder or 2 to 4 cloves minced garlic
- ½ cup freshly grated Parmesan cheese
- salt and pepper, to taste

Step 1: Preheat the oven to 425 degrees. Prepare a large baking sheet with aluminum foil or parchment paper.

Step 2: Place the asparagus on the prepared baking sheet.

Step 3: Drizzle olive oil over asparagus. Toss to coat the asparagus with oil. Then, sprinkle with salt, pepper, and garlic. Can you believe how easy this oven roasted asparagus comes together?

What do I do if the asparagus is too hard?
This all comes down to timing and temperature. The asparagus should be no thicker than a pencil. Anything thicker will require a longer cooking time. Cook for 15 minutes but check in on them constantly, as overcooking can make them stringy and tough. As well, asparagus should be cooked 400-450 F; I go with 425 F but, as oven temperatures vary, you may want to go up to 450 F.
Do you have to boil asparagus before baking?
You don’t necessarily need to boil asparagus before baking it, as it will cook through in the oven. However, some people prefer to blanch or boil it first. This can help to soften the asparagus slightly and reduce the overall cooking time so you know what to do if you are in a rush 🙂
How To Store Oven-Baked Asparagus
To store baked asparagus you need to allow it to cool to room temperature first, then transfer it to a Tupperware. You can store baked asparagus in the fridge for up to three days. Reheating baked asparagus in the oven is extremely easy. Just preheat the oven to 350 F and place the asparagus on a baking sheet. Bake for 5-10 minutes, until it is heated through. Alternatively, you can heat the asparagus on the stove by placing it in a pan over medium heat until it is warmed through.

You can also grill the vegetable along with your meat, if you wish. Doing so is quicker, cuts down on clean-up, and perhaps most importantly, it allows the flavors to mingle — the asparagus can absorb some of the meat’s juices and enhance an already-delicious side dish!

Be sure not to cook too long. Delicious , but I let ir cook too long. Next time, I’ll blanch asparagus first to soften. My husband likes veggies to be soft.
