When it comes to cooking, I am very generous. Nothing makes me happier than having a table full of people enjoying the fruits of my culinary labor. When my husband is out of town, however, solo eating can bring me great pleasure. The dining room table makes way for the couch, where I’ll happily slurp up a bowl of noodles, pick at a beautiful tray of sushi, or give in to my sweet cravings by making myself a big, gooey mug cake. Last fall, for example, when I had an evening to enjoy my own company, I made this aromatic pumpkin spice latte mug cake. What I love about mug cakes is how easily they come together. Just mix a few simple ingredients in a mug, give it a quick blast in the microwave, and dig in! Made with pumpkin purée and warm spices such as cinnamon and nutmeg, every bite of this cake is pure autumnal coziness. Topped with whipped cream and a good drizzle of caramel, this is truly a treat meant to be savored slowly, preferably while wearing flannel pajamas, under a fluffy blanket.

Make it your own
Love chocolate? Add cocoa powder instead of espresso powder, stir in a heaping tablespoon of chocolate chips, or drizzle the cake with melted chocolate. To make the cake just a little more wholesome, consider using whole-wheat pastry flour and replacing the refined white sugar with coconut sugar. Want to make this recipe vegan? Simply swap the milk for soy milk (or any other plant-based milk) and top with plant-based whipped cream or a dollop of coconut cream. How do I store leftovers?
Though I usually don’t have leftovers, if you do, simply wrap the cup tightly with plastic wrap and store the cake at room temperature for up to 24 hours or in the fridge for up to 3 days. You can eat the cake cold or warm it up in the microwave.

Pumpkin Spice Latte Mug Cake Recipe
Ingredients
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 teaspoons espresso powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup pumpkin purée
- 1/2 teaspoon vanilla extract
- 1/3 cup granulated sugar
- 1/4 cup milk
- Whipped cream
- Caramel topping
Instructions
- Spray a large mug with nonstick cooking spray.
- Add the flour, baking powder, espresso, cinnamon, nutmeg, and salt to your mug. Using a fork, stir well to combine.
- Add the pumpkin purée, vanilla, and sugar. Stir until well combined. Slowly add the milk and stir to incorporate all the ingredients.

- Microwave on high for 2 minutes.
- Remove the mug from the microwave and allow the cake to cool for 5 minutes.

- Top with whipped cream and a generous drizzle of caramel.
