Slow Cooker Beer BBQ Chicken Sandwiches

With the record breaking heat we’ve had in Georgia this summer, I find myself turning to my slow cooker more and more. It’s just too dang hot to turn on the oven. A recipe like this is a real life-saver on a hot day.

If you need a terrific side dish to go with this recipe, try this Amish Cucumber Salad. It is SO good and comes together quickly.

The new school year is starting up soon, and this is a slow cooker recipe you’ll want to have in your repertoire for busy weeknights. Just put the ingredients in the slow cooker and have dinner ready and waiting for you at the end of the day. The alcohol in the beer cooks out making this a flavorful, family-friendly meal.

Ingredients

  • 4­-5 boneless skinless chicken breasts
  • 1 small onion, diced
  • 4 ounces beer, any type (I like a lager)
  • 1 1⁄2 cups BBQ sauce, any type (I like sweet & spicy)
  • 1⁄2 tsp onion powder
  • 1 tsp paprika
  • 1 garlic clove, minced
  • 1⁄4 tsp salt
  • 1⁄4 tsp black pepper
  • whole wheat rolls or buns

Instructions

Step 1: Add onion, beer, BBQ sauce, onion powder, paprika, garlic, salt, and pepper to slow cooker; whisk slowly to combine (the beer may get really frothy here ­ it’s okay). Add the chicken and spoon the sauce over the top. Cover and cook on low for 7 hours or high for 5 hours.

Step 2: Remove chicken from slow cooker, and using 2 forks shred the chicken. Add back to the slow cooker and stir chicken into sauce. Spoon about 1⁄2 cup of chicken into buns and serve immediately!

    This looks so awesome. However I am beer allergy, can I replace beer with other ingredient ?

      I have also used cola and dr. pepper to slow cook meat. Both are great!
