White Chicken Chili made in the slow cooker or crock-pot is comfort food at its best. There is nothing more comforting than a warm bowl of soup or chili.

Cooking in the slow cooker makes life so much easier. With this delicious slow cooker white chicken chili, you can set it and forget it. Then you will have an amazing, delicious dinner without all the work. One bite of this incredible chili and it is going to become a family favorite.

What Vegetables Go Into Chili?

In this recipe, I am using onions and celery as well as a jar of salsa verde and jalapeno which adds more veggies. You can also add things like zucchini, carrots or corn to the chili too.

What Toppings Go With White Chili?

Some of the best toppings for this Slow Cooker Chili is this like bread and things to cool your mouth from the warm chili. You can use breads like garlic bread, cornbread or any type of rolls. You can also use things like salad and cut or sliced vegetables.

Ingredients

  • 2 to 3 cups boneless, skinless cooked chicken, cut into bite-size pieces
  • 2 cups low sodium chicken broth
  • 1 sweet onion, diced fine
  • 1 stalk celery, diced fine
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and diced fine
  • 1 (16 ounce) jar salsa verde
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper
  • ¼ teaspoon black pepper
  • 1 cup shredded monterey jack cheese, plus additional for garnishing if desired
  • 2 tablespoons chopped cilantro, for garnishing if desired
Ingredients for Slow Cooker White Chicken Chili: chopped chicken, cannellini beans, pinto beans, salsa verde, chicken broth, onion, garlic, and spices.

Instructions:

Step 1: Combine all ingredients in the slow cooker EXCEPT for the cheese.

Combining chicken, beans, onion, jalapeño, salsa verde, and spices in a slow cooker for Slow Cooker White Chicken Chili.

Step 2: Cook on high for 2 hours or low for 4 hours.

Serving slow cooker white chicken chili from the pot with a ladle.

Step 3: Stir in the cheese until melted and smooth.

Step 4: Serve topped with additional cheese, sour cream, and/or chopped cilantro, if desired.
