Can I Make this Breakfast Casserole Be Made Ahead of Time?

If you want to save a few steps in the morning to make this tater tot casserole ahead of time, you can prepare everything up to adding the tater tots to the casserole. You do not want to add them until you are ready to bake them. Because the tater tots should be frozen for baking, and because they will get soggy if soaked overnight.

Can I Use any Other Cheese in this Recipe?

I think that cheddar cheese works best in this recipe although pepper jack will also taste fantastic. You can use whatever shredded cheese you like best.

How to Make this a Spicy Tater Tot Casserole

You can easily make this a spicy breakfast casserole. Dice up three to four jalapenos and add it to the egg mixture. Remove the ribs and the seeds to control the heat. You can also add hot sauce to the egg mixture.

How to Store and Reheat Tater Tot Casserole

If you have any leftovers, you can store them in an airtight container in the fridge for up to three days. You can also freeze the casserole for up to two months. To reheat, place it in a 350-degree oven for 20 to 30 minutes or until heated through.

Ingredients:

  • 1 pound ground breakfast sausage
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 8 eggs
  • 2 cups milk
  • 1 teaspoon garlic powder
  • ½ teaspoon pepper
  • 1 ½ cups Colby jack cheese, divided
  • 28 oz frozen tater tots
Ingredients for Tater Tot Breakfast Casserole: ground breakfast sausage, eggs, milk, tater tots, Colby jack cheese, onion, red bell pepper, garlic powder.

Instructions:

Step 1: Preheat your oven to 350°F and grease a 9×13 inch casserole pan.

Step 2: In a medium skillet, combine the sausage, onions, and bell pepper over medium heat. Cook until the sausage has browned and crumbled.

Step 3: Drain the grease from the sausage mixture and spread it in the casserole pan.

Step 4: In a mixing bowl, whisk together the eggs, milk, garlic powder, and pepper.

Step 5: Pour the egg mixture over the sausage mixture.

Step 6: Sprinkle half the cheese and the tater tots into the casserole pan.
