When you want a new and exciting complement to your next Mexican feast or a fast fix dip to take to a party, you cannot beat this delicious corn dip. If you’ve never had corn dip before, please let me tell you about what you’re missing out on.

In this recipe, canned Mexican-style corn is spiced up and paired with a whole lot of yummy mayonnaise and sour cream to create a dip with the creamy, velvety texture you’re looking for.

Add some chopped green onions and jalapeños (which are optional and can be served on the side for wee ones), as well as chiles. Then, you toss in a whole big package of shredded cheddar, which truly takes this amazingly flavorful and chunky dip into over-the-top delicious territory.

This dip is super tasty and makes for a new kind of Mexican side to wow the family. It will be a welcome addition to those usual sides of guacamole and salsa.

This quick and easy recipe for corn dip makes a great take-along to any party because it makes 12 big servings of dip.

This corn dip is great for any party, whether indoors or outdoors, because it holds up well in the fridge or even for a few hours outdoors (use an inflatable chiller to be safe!). It’s good for a make-ahead dish that will still taste amazing, even if you make it the day before.

This cheesy, creamy, chunky corn dip works wonderfully atop blue corn chips, spicy Cheetos, or crudités, like celery and carrot sticks. Even some spicy Buffalo Cauliflower Wings taste great dunked in this creamy, flavorful dip.

How do I store leftovers?

This dip can be stored in an airtight container in the refrigerator for up to 3 to 4 days. This dip does not freeze well, as it contains two no-nos for freezing well: mayonnaise and sour cream. But it’s so good that you’ll eat up those leftovers faster than you can say “corn dip.”

Ingredients
  

  • 3/4 cup mayonnaise
  • 1 1/4 cups sour cream
  • 3 cans (11 ounces each) Mexican-style corn drained
  • 1 can (7 ounces) chopped green chiles drained
  • 1 jalapeño pepper seeded and minced (optional)
  • 1/3 cup chopped green onions
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 package (16 ounces) shredded sharp cheddar cheese

Instructions
 

  • In a large bowl, add the mayonnaise, sour cream, corn, green chiles, jalapeño, green onions, black pepper, garlic powder, and shredded cheddar. Stir until well mixed.
