I like to use extra sharp cheddar cheese. It really does not matter what kind of cheese you decide to use, but it is important that the cheese has a sharp flavor so that it stands out and doesn’t get lost in the other flavors.

How to Make Loaded Potato Salad

Preheat oven to 425 degrees F.

Arrange potatoes in a single layer, in a greased rimmed baking sheet. Sprinkle with salt and pepper, to taste.

Bake uncovered for 30-35 minutes, until fork tender. Allow to cool completely.

Add the potatoes to a large bowl and gently smash with a potato masher or back of a large spoon. Be careful not to over-smash them, leaving some texture.

  • ½ cup mayonnaise
  • 1 cup shredded Cheddar cheese
  • 3 green onions sliced
