When I posted a picture of this Pickle Bites appetizer to Instagram the other day, I learned that I’m not the only one who likes to make this simple 3 ingredient appetizer.

Pickle Bites Appetizer

One person suggested using ham instead of my usual corned beef, and I will definitely be trying that next time around. That’s one of the things I love about sharing recipes on the blog – it’s all the wonderful feedback and ideas I get from readers.

These pickle bites couldn’t be any easier to make, although it’s been a while since I whipped up a batch. They seem to start appearing around here when the grilling season starts up. If you’re a fan of the dill pickle, you’re gonna love this simple appetizer. It’s always such a crowd pleaser around here.

Ingredients:

  • sliced corned beef from the deli (about .5 pound should do)
  • dill pickles
  • herb cream cheese spread (I typically use the Philadelphia Chive and Onion spread.)

Instructions:

Step 1: Spread approximately one tablespoon of cream cheese onto each slice of deli meat. Place a dill pickle at one end of a slice of meat, carefully roll until the deli meat is completely wrapped around the pickle. The cream cheese will bind it all together.

Step 2: Using a knife, cut the rolled pickle into 1/2 inch slices. Serve immediately or store in the refrigerator.

    I used to make these doe parties all the time, but I haven’t made them in a while! I’ll have to make them again this summer, thanks for the reminder!

    Interesting – I’ve never heard of these before. If you’d use a mustard/cream cheese combo and ham it’d would be a little like a cuban sandwich!
